MEXICAN DATE PIE
3 egg yolks
Scant i/2 cup white sugar
1/4 tsp. salt
1/2 tsp. vanilla
2 cups milk
Dates
Nutmeg
Method:
Line an unbaked pie shell with dates,beat
together egg yolks, sugar, salt, vanilla and milk.
Pour over dates, sprinkle with nutmeg. Bake in
400 degree oven until done. When slightly cooled,
beat egg whites until stiff, adding 2 tablespoons
sugar, 1/4 teaspoon of vanilla, -put on pie and
return to oven to brown at 375 degrees.

JELLO FRUIT FIE
1 lemon jello
1/2 cup white sugar
1 package vanilla pudding 434 size (not in-
stant)
1 cap water
Cook above ingredients on low heat or double
boiler. Cool. Add peaches and pour into cooked
shell. May use strawberries or raspberries. If so
use strawberry or raspberry jello.

Prepare 1.., package Dreamt Whip. Beat 8 oz.
softened cream cheese with 3/ cup sugar until
fluffy. Blend in Dream Whip. Pour into 9 In.
crumb crust. Top with canned cherry pie filling,
Chill.

ANGEL PIE
4 egg whites
1 cup sugar
Pinch of salt
1/2 tsp. cream of tartar
3/4 tsp. vanilla.
Beat egg whites till foamy. Add salt, cream of
tartar and vanilla. Continue to beat until soft
peaks form. Add sugar, 2 tbsp. at a time, beating
----well—alter- each addition. Beat -till stiff--peaks--
form. Spread in greased 9" x 9" pan. Bake 40
minutes at 300 degrees'. ,Cool.
Filling
4 egg yolks
1/2 ctip sugar
3 tbsp. lemon juice
1/2 pt. whipping cream
Beat egg yolks and sugar together in top of
double boiler till thick. Stir in lemon juice. Cook
til thickened (10 minutes). Chill 1 hour. Fold in 1/
pt. cream mhipped to lemon filling: Spread Over
' meringue. Just before serving beat remaining y4
pint cream and spread over top.
