FRUIT SNOW DROPS
14 vanilla wafers
1 cup brown sugar
2 beaten eggs
' 8 oz. dates (chopped)
1 tbsp. lemon juice
1/2 cup shredded coconut
1/2 cup chopped walnuts
1/2 cup candied cherries..
Coarsely crush cookies. Combine sugar, eggs,
dates, in saucepan. Cook over medium heat until
thick (approximately 10 minutes), stirring
continuously. Remove from heat and stir in
lemon juice, cookies (crushed), coconut, nuts
and cherries. Blend well, cool and form balls.
Roll in coconut. Store in cool place in air -tight
container.

SHORTBREAD
COOKIES
1/2 cup butter, or margarine
2 tsp. vanilla
1/2 cup icing sugar
1 cup and 6 level tsps. wheat starch (sift after
measuring)
Jam or. Jelly
Cream butter until smooth and cream with
sugar and vanilla. Add the sifted wheat starch
and blend into a stiff dough. Make into one inch
balls: press centre of each ball with' thumb to
make a deep dent. Put jam or jelly into each
dent.
Bake on baking sheet for 5. to 8 minutes at 350
degrees F. Makes about 21/2 dozen cookies.
NOTE: Cookies do not brown.
Wheat starch is available at "The Radiant Life
Centre", Clinton.

CANDY CANE COOKIES
/ cup butter, softened
1/2 cup shortening
1 cup confectioner's sugar
Legg .
11/2 tsp. almond extract
1 tsp. vanilla
2% cups flour
1 tsp. salt
% tsp. red food coloring
Heatoven to 375 degrees. Mix together first six
ingredients. Blend in flour and salt. Divide dough
in half and blend food color in one half.
Shape one teaspoon dough fr m each half into
a 4" rope. Place ropes sid by side; press
together lightly and twist. Place each cookie on
ungreased baking sheet and curve top of cookie
down toform handle of cane.
Bake about nine minutes or till set and very
light brown.
If you wish, mix > cup crushed peppermint
candy and 1%2 cup white sugar. Sprinkle on hot
cookies.
Makes about 4 dozen cookies.

CHRISTMAS COOKIES
1 cup soft butter (no substitute) •
3A cup brown sugar
1/2 tsp. vanilla
1/8 tsp. salt
21/2 cups all purpose flour '
1 cup almonds (sliced lengthwise)
1/2 cup each red and green cherries, left whole.
Cream butter, add sugar, and then vanilla, salt
and flour. Finally add nuts and cherries -and
form into long rolls. Wrap in wax paper and chill
thoroughly. Slice thinly with a very sharp knife
and bake on greased baking sheet in 375 degrees
F for 10 minutes till golden in colour.

CHRISTMAS ROCK COOKIES
1 cup brown sugar
Two-thirds cup melted butter
3 eggs
2 cups pre -sifted all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. cloves_
1 cup chopped dates
1 cup chopped walnuts
1 cup candied mixed fruit
i cup raisins soaked in hot water
1 tsp. vanilla
Bake in 375 degree oven for 12 minutes.

1 cup and 2 tbsp. flour (cake .and pastry)
1 cup chipits (chocolate)
Cream together shortening, white and brown
sugar and vanilla. Make fluffy. Add egg and
beat. Sift flour, soda and salt in sifter and fold
into first mixture. Add chipits. Grease cookie
sheet. Cook in 375 degree oven about 8-10 minutes
or till golden brown.

GINGERBREAD MEN
1. cup of margarine
1 cup oft white sugar
1 teaspoon of salt
2 eggs
2 tablespoons white vinegar
1 cup molasses
6 cups flour
2 teaspoons baking soda
4 teaspoons ground ginger
1 teaspoon each of cloves
nutmeg and cinnamon
Bake 7 -10 minutes at 350 degrees F
Note: for best results chill dough in
refrigerator overnight before rolling out.

GRASSHOPPER PIE
Chocolate Crumb Crust: •
11/2 cups chocolate wafer crumbs
1/4 cup melted butter
Filling :
30 large marshmallows or 3 cups miniature
1/2 cup milk
1/4 cup green creme de menthe
1/4 cup white creme de cacao
11/4 cups whipping cream
Combine chocolate crumbs and butter; press
into a 9 inch pie plate. Chill.
Melt marshmallows with milk over low heat,
stirring constantly. Chill until slightly thickened.
Blend in liqueurs, Whip cream and fold in. Tint
with green food colouring if desired. Pour into
crust. Chill until firm. Garnish with grated
chocolate, crushed peppermint candy, or
whipped cream. Makes about 8 servings.

RITZ PIES
(Tastes like apple pie! )
20 Ritz crackers
2 cups water
11/ cups sugar
1/4 taspoon nutmeg
2 teaspoons cream of tartar
1 teaspoon cinnamon
Butter or margarine
Combine water, sugar, cream of tartar and
bring to boil. Drop in Ritz crackers whole and
keep boiling until transparent. (8 to 10 minutes).
Pour into unbaked pie crust. Sprinkle with
cinnamon, nutmeg, dot with butters, Cover with
top crust. Bake oven 425. degrees (30 to 35
minutes). Serve warm.
For squares: 10 x 14 cookie sheet (11/2 recipe is
enough).

GREEN TOMATO MINCEMEAT
6 medium green tomatoes
6 medium tart apples
1/2 lb. seedless raisins
1 tablespoon cinnamon
1/4 cup orange juice
1/4 cup cider vinegar
1 cup brown sugar
1/2 cup minced citron_ .... s. •
2 tablespoon minced orange rind
1 teaspoon salt
1 teaspoon cloves
1/2 teaspoon allspice
1/2 teaspoon ginger
1/4 teaspoon nutmeg
Method:
Force tomatoes and peeled and cored apples
through a food chopper. Add remaining
ingredients and cook until thick. Fill sterilized
jars and seal. Makes approximately 11/2 quarts.

FRESH
STRAWBERRY PIE
Baked shell.
1 quart berries
3/ cup white sugar
pinch of salt.
Arrange half of the berries in the shell. To
remainder of berries, add sugar and salt. Cook
gently until sugar is dissolved. Add 1 heaping
tablespoon of cornstarch dissolved in cold water.
Add small piece of butter. Cook until thick. Pour
mixture over raw berries in shell. Cover with
whipped cream and garnish with whole berries. J

HUCKLEBERRY PIE
3 cups huckleberries, cover with cold water,
add one-half teaspoon of baking soda and bring
to a boil. Drain. Then add water to cover and boil
again for 10 minutes. Crush with potato masher.
Add one cup white sugar mixed with .three
tablespoons cornstarch, one•or two tablespoons
lemon juice, and one-half teaspoon nutmeg or
cinnamon or a little of both.
Dot with butter and stir till thick. Pour into
uncooked pie crust.
