At least 15 volunteers were out Monday night helping prepare beans for the festival on the weekend. Helping mix the in-
gredients are, from right: Jennifer Erb, Kelly Thiel and Jamie Scell, on left: Rose Erb and Barb Jeffrey. Volunteers begin pre-
paring the beans seven days prior to the festival.
Bean recipes for your taste buds
Bean Basics
Dry beans need to be soaked be-
fore cooking to replace the water
lost in drying. A general rule is to
use 3 cups (750 mL) of water for
each cup (250 mL.) of sorted and
rinsed beans. Then follow one of
the directions listed below:
Quick Soak
Bring to a boil, cover and boil
for 2 minutes. Remove from heat
and let stand 1 hour. Drain.

Overnight Soak
Let stand overnight in refrigera-
tor. Drain (Beans soaked by this
method cook in Tess time and keep
their shape better.)
Microwave Soak
Combine 3 cups (750 mL) hot
and 1 cup (250 mL) of dry beans
in a..4 qt.. (4 <L) . utiicrowuveabl `•.
casserole dish. 'Cover and micrl--
wave at HIGH power for 15 min-
utes or until boiling., Let stand 1
hod. Drain.
Microwave Cooking
In a 4 qt. (4 L) microwaveable
casserole dish combine 3 cups
(750 mL) water and 1 cup (250
mL) soaked beans. Cover and mi-
crowave at HIGH power 10-15
minutes or until boiling. Stir and
microwave at MEDIUM power for
25-35 minutes, stirring every 15
minutes or until fork tender.
Crockery Cooking
Place beans in boiling water
(enough to cover) and simmer for
10 minutes. Then place beans in
crockery cooker and add 6 cups
water per 1 Ib. (454 g.) of beans.
Cook on low for 12 hours. This
takes care of both the soaking and
initial cooking steps.
Pressure Cooking
Soak the washed and sorted
beans by either the overnight or
quick method. Place in pressure
cooker; cooker should be no more
than 1/3 filled to allow for expan-
sion. Add water to cover and 1
tbsp. (15 mL) of oil to reduce
foaming. Cover; cook at 10
pounds pressure about 20 minutes.
Tips
1 lb. (454 g.) dry white Ontario
pea beans = 2 to 2 1/2 cups (500-
625 mL) dry beans.
Cook beans just until barely ten-
der if they are to be cooked again
in a recipe.
White cooked beans can be pur-
chased as canned beans in tomato
sauce with or without pork. They
are already cooked so should only
be reheated until hot.
Cooked beans and bean dishes
can be frozen in air -tight covered
containers for up to 6 months.
Oil reduces foaming. 1 tbsp. (15
mL) oil for every cup of btans dur-
ing presoaking reduces foaming
1 during rapid boiling.
German bean salad
A hearty go -together vegetable
with cold cuts or roasts. Boil white
beans till tender in salt and water.
Drain off all liquid.
For 1 to 1 1/2 quart bowl of beans,
when cool add dressing of:
1/2 cup sour thick cream (Miracle
Whip salad dressing may be substi-
tuted).
I tbsp. vinegar
3 tbsp. white sugar
1/4 to I/2 tsp. salt •"
1 small cooking onion chopped
fine, black ground pepper to taste.

Scrumptious salad from the
South Seas
3 cups cooked white pea beans
1 (10 oz./284 mI) can mandarin
oranges, drained
2 cups canned or fresh pineapple
chunks, drained
1/2 cup diced green pepper
1 (8,ozJ227 mI) canned sliced wa-
ter chestnuts, drained
2 stalks celery, sliced diagonally
1 red apple, cored and diced
1/2 cup raisins
1/4 cup yogurt or sour cream
2 tbsp. mayonnaise
I/2 cup toasted macadamia nuts or
slivered almonds
1/2 cup broken banana chips
leaf lettuce (optional)
In a large bowl, combine the first
eight ingredients. Mix yogurt with
mayonnaise and stir into bean and
fruit mixture. Serve in a lettuce -
lined bowl or in hollowed out pine-
apple halves. Garnish with nuts and
banana chips. Serve with pineapple
or whole wheat muffins.
