Tomatoes - a tasty choice
These easy -to -grow vegetables can be used in several dishes
Oven roasted plum tomatoes
with fettucine
This recipe incorporates the best of Italian
cooking - it's quick, easy, uses few in-
gredients and a super -simple but incredibly
flavorful cooking method. By oven -roasting
the end -of -summer harvest of plum tomatoes,
. you can turn into a sophisticated pasta sauce
that doesn't require hours of simmering or
constant pot -watching. Roasting firms the tex-
ture of the tomatoes and concentrates their
flavor into a memorable dish that's delicious
served hot or at room temperature.
Preparation time: 10 min. Roasting time
60 to 70 min. Serves 4.
12 medium plum tomatoes (about 1-3/4 Ib./
875 g)
salt and pepper
1/2 cup chopped fresh parsley
1/2 cup olive oil
6 cloves garlic, minced
1/2 cup chopped fresh basil leaves
2 tbsp. butter, softened
one third pkg. (900g) fettucine, cooked and
drained
freshly grated Parmesan cheese
• Cut tomatoes in half lengthwise; place,
cut side up, in 12x9inch (3.5L) baking dish.
Sprinkle lightly with salt and pepper. Com-
bine 1/4 cup (50 ml) parsley, 2 tbsp (30 ml)
olive oil and garlic; spread over cut sides of
tomatoes. Bake in 425 deg. F (22o degC)
oven 60 to 70 min. or until tops are slightly
charred. Cool 15 min.
• Squeeze pulp from tomatoes into bowl,
discarding skins; coarsely mash pulp. Stir in
basil. butter, remaining olive oil and parsley.
Toss with hot cooked fettucine. Serve with
Parmesan cheese.
Fresh tomato and pasta toss
This recipe is positive proof that the best
dishes are often the simplest. Just cook slim
delicate pasta until "al dente" and toss with a
variety of butter -
sauced fresh veg-
etables - garlic, mush-
rooms, onion, parsley
and chunks of bright
red tomatoes. Sprin-
kle each serving liber-
ally with Parmesan
cheese and freshly
cracked pepper.
1/2 Ib. uncooked cap-
elli, vermicelli or
spaghettini
1/2 cup better
1 cup sliced fresh
mushrooms
1/2 cup hopped onion
1 clove garlic, minced
2 tomatoes, seeded
and diced
1/4 cup chopped fresh
parsley
salt and pepper
grated Parmesan
cheese
• Cook pasta ac-
cording to package

Meanwhile, melt but-
ter in large frypan; saute mushrooms, onion
and garlic until tender. Add to pasta along
with tomatoes and parsley; toss well to com-
bine. Season to taste with salt, pepper and
Parmesan cheese. Serves 4.

EXETER - Visitors have been
welcomed form London and Hen-
sall in August. Morley Hall
brought a group of friends from
London and some of the residents
entertained from Queensway Nurs-
ing Home in Hensali. Carol Gas-
cho led the residents in a program
of reading and songs, as well as a
sing song.
Cecelia Edgar read a poem.
Joyce Pepper was the pianist for
the sing song. Mildred Gingerich
read a poem and sang a duet with
Carol Gascho, the activity co-
ordinator. Leo Krane manager of
Big V Drugstore gave a talk on
August 1 on how to use medica-
tion. On August 15, Tammy An-
taya spoke on her new activity,
Supportive Housing for seniors 65
years and over who are physically
or mentally challenged. August 29.
speaker was Kim McIntyre on
hearing problems. Fifty per cent of
people attending have some hear-
ing problems. These were given
individual hearing devices to wear
while she spoke and the difference
was astounding. She told where
people can contact specialists.
Birthday honors for August were
sung for Lyla Broderick and Mil-
„ dred Thomson with cake and can-
dles. Keyboard players for the
month were Jean Hodgert, Maxine
Sereda, Don Stuart, Wilma Davis,
Josie Ryckman. August 8 Amy
Shapton entertained with clogging.

SARNIA - On Oct. 14 the Sarnia
Lambton Kidney Foundation will
present an evening with one of the
stars of Hee Haw. Gordie Tapp.
Tickets are 515 for reserved seat-

place at 8 p.m. All proceeds will re-
place the patient van.

GRAND BEND - The Jazz Lit-
urgy presented at Grand Bend
United Church on August 27, saw
an overflow crowd of about 350.
Members of the Can -Am Or-
chestra were featured in the pro-
gram of jazz liturgy on "The Para-
ble of the Good Samaritan". Many
other numbers were also enjoyed.
Rev. Jack McKay was narrator.
On Sunday September 3, the
new minister Rev. Robert Putman
conducted the last outdoor service.
His sermon topic was "The
Strength of our Commitment".
Special music was solo's by Mary
Lou Dixon, singing "Heaven
Came Down", "Surely the Pres-
ence", and an "Irish Blessing".
United Church Mission will
meet Thursday September 14 at
1:30 p.m. Roll call to be an item
for the Food Bank.
