Delicious bean icecream
developed in CCAT lab
CENTRALIA - Beans are not
only good. They are good for you.
And they are much more versatile
than just supplying the main in-
gredient in baked beans.
Dr. Vi Currie, associate principal
of Centralia College of Agricultu-
ral Technology, has been working
for the past year to develop a deli-
cious bean ice cream, as well as
sherbets in a number of flavours.
Those attending the college's annu-
al crop day on August 16 were
among the first to sample either
creamy French vanilla, full-bodied
chocolate, piquant coffee, or yum-
my rum and raisin (made with real
Bacardi rum). The strawberry sher-
bet was good, but had a heavier
texture than the fruit -flavoured deli-
cacies in the supermarket.
Currie has perfected both regular
and sugar -free recipes.
As the ice creams and sherbets
contain no flour, they can be en-
joyed by those with gluten sensi-
tivity.
The soluble fibre contained in
white pea beans, as well as other
lentils, barley and oat bran, has
proven to be very beneficial to
health. Research has shown that
%people with diets high in fibre do
not suffer from certain colon can-
• cers. This type of fibre reduces
cholesterol, and is proving of ben-
efit to certain types of diabetes.
- Several companies have been ap-
proached by the Ontario Bean Pro-
ducers Marketing Board. Until the
ice cream and sherbet recipes are
patented, the proportions are a trade
secret. Currie did pass on some
hints.
The beans, which replace some
of the milk, are cooked and pureed.
They are then mixed with sugar
—rand salt (and melted chocolate if
you arc making that flavour) and
cooked for about five minutes.
Beaten eggs mixed with some of
the hot mix arc added next, and
everything is cooked and stirred for
a further two minutes. The fla-
vouring is added after the mix has
been chilled. Everything is then
frozen according to directions on
whatever kind of freezer is used.
Thc end result is a delicious, nu-
tritious dessert or snack that com-
pares favourably in looks and taste
with the finest commercial ice
cream. You may indulge with an
easy conscience, as the fibre con-
tent makes bean ice cream very fill-
ing - you don't eat as much, you are
not hungry for quite some time af-
ter, and the soluble bean fibre does
good things to your insides. Be-
sides, the recipes call for only natu-
ral ingredients. There are no addi-
tives or preservatives.
Currie is still experimenting.
She hopes eventually to eliminate
all milk and cream by substituting
bean liquor. This would appeal to
people w'to love ice cream but have
an allergy to dairy products.
Currie had previously developed
recipes for other bean -based good-
ies. She has been working with
bean flour for over 12 years.
Last November she passed out
samples of bean brownies, bean
muffins, a bean sheet cake, a bean
spice loaf, bean bread, bean cook-
ies, a bean -banana oat loaf anda
beans and rice side dish during a
bean promotion at Valumart. All
the products were given good rat-
ings for flavour and appearance.
Requests for recipes came in for a
long time after visitors to the plow-
ing match near Wingham had their
first taste of bean muffins and sev-
cn-bean salad.
Deb C.tmpbell, lecturer in foods
technology at CCAT, has come up
with a crisp and tasty triangle -
shaped bean chip, which can be eat-
en as is or used with a dip.
All the products were developed
in CCATs food technology lab.
Currie is optimistic about the fa

She finds that thinking of new uses
for white bcans is self-perpetuating.
"Thc more I do, the more I think
of," she said.
Thc one thing she has not yet
thought of is a name for the new
bean ice -.:ream. Any suggestions
would be welcome.
