Last year a bean salad was
added to the menu. Betty call-
ed on Dr. Vi Currie, assistant
principal of Centralia College
of Agricultural Technology,
for help in devising a recipe,
and preparing the salad in the
College kitchen. Dr. Currie
handed the problem over to '
home economics technician
Gwen Dykeman.
Working from a recipe for
yellow eye bean salad for 48
supplied by the Ontario Bean
Producer Marketing Board,
the inventive cooks changed
the basics to include white
beans, multiplied all ingre-
dients by 50, substituted a
spicier Italian dressing for the
commercially unavailable oil
and vinegar originally called
for, and add celery, green
peppers,pim entosand extra
condiments.
"We put in our special Cen-
tralia touch", Dr. Currie
remarked.
The salad passed the
crucial taste test; it had all
been devoured by early
afternoon.
This year Mrs. Dykeman
and a helper will begin with
championships, no sight of the
many entertaining acts per-
forming for the crowd's en-
joyment - just slaving over
hot batches of beans. But she
has no complaints.
"I like working in,the kit-
chen. We have a lot of fun,"
she said.
Betty has been on the
Festival's food committee
ever since she and her fami-
ly moved to the village from
London in 1973. Before the
move, slie didn't know Zurich
was on the map.
When the Kirks were
househunting,they liked the
house they were shown in
Zurich, and the active Minor
Athletic Association was a
further inducement for their
hockeyplaying sons.
The Kirks moved into their
home in July, went on
holidays and returned in mid-
August. A few days later, Bet-
ty answered a knock on her
door to be greeted by a
member of the Bean Festival
Committee asking . if she
would come out the next night
and help cook beans. Think-
ing this would be a good way
to get to know her new com-
munity, Betty said "yes".
During her eight-year stint,
Mrs. Kirk has served as
treasurer for two years, and
secretary for another two.
When former food committee
chairman Lorraine Swartzen-
truber relinquished her posi-
tion two years ago, Betty took
her place.
iThe menu and methods of
preparation have evolved and
changed over the years. Un-
til the purchase of the
Festival kitchen seven years
ago, all food preparation was
done under canvas in a big
tent.
The coleslaw has been pur-
chased for the past three
years, to the chagrin of some
' purists.

Betty Kirk and three or four

packing beans in one pound
containers for customers who
want to eat at home.
Bean dinners are served on
Festival day until 7 p.m., and
there are always a few strag-
glers, Betty said.
For the food committee, the
Festival is not over yet. Peo-
ple come knocking on the
bean kitchen door bright and
early Sunday morning, arm-
ed with roasting pans and
other large containers, to buy
leftover beans at bargain
prices. Betty still remembers
one man who proffered two
large canners covered with
grime and dust, and said,
"Wash these out and fill
them."
She complied with his re-
quest. "By that time we are
so slaphappy we'll do
anything," she joked.
The Festival volunteers
spend another week cleaning
everything up before closing
the kitchen's big brown doors
for another year. Betty ad-
mits more time is required to
regain her appetite for a big
plate of pork and beans with
all the trimmings.

Methodist University of
Dallas, Texas having
earned his Master of Fine
Arts Degree. He has sign-
ed a . contract with the
Richmond, Virginia
Museum Theatre to act in
a series of roles. He is the
son of Donald and Shirley
(nee Fairbairn) Bedard of
Detroit, formerly of
Zurich. - -

2 cups dry white beans
6 cups water . .
3 Tbsp. flour
1/4 cup dry mustard
3/4 tsp. powdered turmeric
1/2 tsp. celery seed
1/8 tsp. curry powder
1/2 tsp. cups. cider vinegar
• 11/2 cups brown sugar
Bring beans and water to a
boil in a covered saucepan.
Boil two minutes. Remove
from heat and let stand,
covered for one hour. Drain.
• Make 'a paste of flour,
mustard, turmeric, celery
seed, curry powder, salt and
1/2 cup of the vinegar. Mix re-
maining vinegar and brown
sugar; heat to boiling. Slow-
ly stir spice paste into
vinegar -brown sugar mixture
and cook until smooth and
thick, stirring constantly. Add
drained beans to the hot
sauce. Simmer for 10
minutes. Remove from heat
and seal in sterile jars. Makes
2 to 3 pints.
