ew restaurant opens up in Seaforth

Nathan Smith is the newest
entrepreneur to join a long
list of successful businesses
on the main drag of town.
Bringing to the table dec-
ades of culinary experience,
the chef from Bayfield is
jumping into the most com-
fortable world he under-
stands and that's the restau-
rant business.
First starting his career as
a dishwasher at the age of 14,
Smith expanded his desire
by enrolling in a culinary
secondary school program
in Niagara Falls.
Following graduation,
Smith's passion led him to
several establishments in
British ,Columbia. He then
landed in the 1 luron County
area and manned the
kitchen at the Red Pump Inn
as the sous -chef. Eventually,
after years in the cooking
industry, Sinith subse-
quently started employment
as head chef, assuming the
role at the Black Dog Village
Pub & Bistro in Bayfield.
After working in those
roles over the past several
years, Smith decided he
wanted to take on a cooking
venture of his own.
Midtown Bistro is what he
came up with.
"I bounced a lot of names
back and forth, this one kind of
stuck because the location of
where it is.... in the midtown,"
Smith said March 4 by phone.
The restaurant is being run
out of the vacant space
where Johnny's Subs and
Sandwiches once operated
and Smith said he is aiming
for a healthier eatery.
The new food shop is con-
centrating on a local feel -
Smith said the Midtown Bis-
tro is buying fresh produce
and other ingredients from
establishments in a close
proximity to Seaforth.
The menu is primarily
compiled of "homemade
soups, fresh healthy salads,
sandwiches, breakfast,
bagels, scones and pastries."
Smith added that he's not
necessarily diving.into the
dinner aspect vet.
"We are going to see what
the community of Seaforth
wants and build off that,"
stated Sinith. "Essentially it's
not what I want, it's what the
community wants"
For the time being, Smith
is working solo, however he
told the Expositor that he'd
be looking for two additions
and one of those people to
fill in as a manager.
Currently he is renovating
the space and expects to be
open by April 1.
"I know enough people in
Seaforth that are looking for
something different, so this
opportunity presented itself
at the perfect time," Smith
said.

They have created a buzz
before their last regular sea-
son game by recognizing their
"loyal Gens Fans." The Cana-
dian Premier Junior Hockey
League (CPJHL) team opened
the Seaforth arena's doors for
their last game with no admis-
sion fee.
Gearing up for a clash on
ice through three gruelling
practices a week and some
players attempting to a gain
a few pounds of muscle mass
with a workout regimen at
Seaforth Fitness, coach and
owner of the Generals T.J.
Runhart said the boys are
well primed.
March 2 Runhart revealed
to the Expositor during an
interview that one of the two
players billeted at his home
was coincidentally headed
to the local gym to pump
iron at the very moment.
"The boys have been hit-
ting the gym regularly,"
stated Runhart.
Since the Generals fin-
ished their regular season,
other teams are still playing,
so their opponent has yet to
be announced, though Run-
hart sees this opportunity as
an unruffled contest.
The pressure has been
lighter lately because most
likely the team with one of
the best records in the
CPJHL will be facing them.

Runhart is poised that this
will be an easier task if they
perhaps make it to the later
rounds of the playoffs.
A further aid in engraving a
win is the three new team
members he signed before
the deadline three weeks ago.
They added a trio of forwards
to the roster with one being
Seaforth native Jack Buckley.
"He took a year off from
midget hockey in town, he
had a real knack to get back
on the ice, so he decided to.
play the rest of the year for
the Generals," said Runhart
concerning the new 16 -year-
old forward.
Currently the Generals are
waiting for the season to
conclude, their challenger is
unknown however they have
been informed that they will
be suiting up for a home
playoff match. March 12.
This series is what Runhart
calls a "tentative game,"
which means the team to
score the most goals in two
games proceeds to the
semi-finals.
"If we go there and lose
2-1 and we come to Seaforth
and win 3-1, then we win the
series," explained Runhart.
"It will be exciting I hope we
can get a lot of people out on
March 12."
