TOMATOCATSUP-Take' 1
bushel of tomatoes, cut them in
. to small pieces, boil until soft,
then rub them through a wire
sieve, add 2 quarts of White
Spirit, Vinegar, 1 pint7� of salt,:1

lb. of whole cloves, lb. of all
spice, 1 tablespoonful of black
pepper, 1 good sized pod of red
pepper (whole.) Mix together
and boil until reduced to one-
half _ the quantity. When - cold
strain through a colader and bot-
tle, sealing the corks. It ' will
keep 2 or 3 years as fresh as
when, first made.
CHILI SAUCE -1 peck of ripe
tomatoes, 2Ih cups. granulated
sugar. 4 large onions,' 2 red pep-
pers, 2 cups of White Spirit Vin-
egar, salt to taste. 1 large table
spoonful whole mixed spice. Boil
gently about 1ih hours.' Then _
mix.34 cup cornstarch and,stir
in. Let boil 10 or 15 minutes.
Seal while hot.
NOTE -Inferior or`weak spices will spoil any P of these recipes.
