Madill Secondary School commencement, to students having the highest standing in a particular course. Menzies Graduates of F.E. Madill Secondary School attended their commencement on Friday night. Receiving the Menzies award this year for students of Brussels Public School were Candace McLellan, left, and Emily Cardiff. McLellan is attending the University of Waterloo, studying science, math and biology, while Cardiff is in the nursing program at the University of Western Ontario. (Vicky Bremner photo) The local recipients included Tyler Jutzi for financial accounting; Megan Kingwell for World History; Emily Cardiff for French and exercise science; Shandi den Dekker for interdisciplinary studies; Jacob Dettweiller for construction technology; and Kevin Freiburger for technology design. Scholarships and awards were also presented. The recipients included Brent Wheeler who was given the Brussels Community Development Trust Scholarship; Emily Elston with the Garniss Family Award; Jill Johnston with the Henry Memorial Merit Award; Kevin Freiburger w-ith the Huron County Award; Shandi den Dekker with the Lieutenant Governor's Community Volunteer Award; Jeanette de Boer; Shandi den Dekker, Traci Ducharme, Jamie Greenaway, Lindsay Inglis and Darren Van Dyke with the Madill Recipient Country Fare By Patricia Ham, Auburn School House mixture over Polenta. The next recipe includes Polenta also, •with autumn vegetable stacks and tasty Gorgonzola cheese. Both were found in the Pick of the Crop recipe book by Jennifer Stamper Hoping you will enjoy and use some of the recipes J will be giving each month. They have all been tested by me in my home, and will come from many sources. They are easy family food that teenagers and parents will enjoy. GRILLED POLENTA WITH ITALIAN SAUSAGE AND TOMATO SAUCE Polenta: 7 cups salted water, add I 2/3 cups cornmeal slowly Cook stirring constantly for 20 - 25 minute,-, until very thick; pour into a jelly roll pan I l/2" thick. Cool. Sauce: I tbsp, olive oil 3 Italian sausage cut in I" pieces 4 large red peppers, seeded and cut in strips 4 large yellow peppers, seeded and cut in strips 1 large onion, sliced 2 garlic cloves, minced I tbsp tomato paste I 28-oz. can diced tomatoes and )u ice I /4 cup cilantro Brown sausage in oil, add peppers, onion, garlic, and saute IO minutes. Snr in tomatoes and the paste. Reduce heat and simmer until sauce has thickened 20 - 30 minutes. Cut Polenlo into 4" - 5" squares, grill until hot. To seive - spoon sauce 2000. VEGETABLE STACKS WITH GORGONZOLA POLENTA 1 eggplant in 1/2" slices 2. green peppers, seeded and cut into quarters 2 medium zucchini, sliced lengthwise 12 shiitake mushrooms, stems removed 3/4 cup olive oil In a large bowl toss all vegetables in the oil and grill until tender. Stack vegetables alternating slices and preserve covered in a warm oven. Polenta: Take 7 cups boiling water, salted, add 1 2/3 cups yellow cornmeal in a slow stream whisking continuously. Cook 20 - 25 minutes stirring with a wooden spoon until it leaves the sides of the pan. Stir in 1/2 cup Gorgonzola and serve on the side of the warm vegetable stacks. CHICKEN FRIED STEAK Pound 1 1/2 lbs. round steak to 1/4” thick. Cut into 6 - 8 serving size pieces. Mix 1 beaten egg with 1 tbsp milk. Dip meat in egg then in 1 cup of finely-crushed saltine crackers. In frying pan brown steak in 1/4 cup cooking oil. Turn once. Cover, and cook over low heat 45 - 60 minutes. Serve with creamy mashed potatoes and buttered carrot slices. Make a gravy with the carrot stock. Brent Wheeler received the Brussels Community Develop­ ment Trust Scholarship at Madill’s commencement on Friday night. The award is presented to a graduate of Brussels Public School who exhibited good citizenship and is proceeding to further education in the technical field. Wheeler is taking electrical techniques at Fanshawe College. Another former Brussels student, Megan Kingwell, not present on Friday, was the recipient of the Jeanne Oldfield Memorial Arts Scholarship. She is taking' English at a university in New Brunswick. (Vicky Bremner photo) Secondary School Teaching Staff Awards; Catrina Josling with the Maitland Women’s Institute Scholarship in Family Studies; Emily Cardiff with the Menzies Endowment Fund Awards, and the OSSTF District Eight Scholarship; Bridget Kellington with the Moms on the Move Award; Megan Kingwell with the Oldfield Memorial Arts Scholarship; Kevin Freiburger with the Patton Memorial Award; Laurin Hoegy with the Pinecrest Manor Award; Brad Carter with the Royal Canadian Legion Branch 180 (Wingham) Award; Chris Cottrill with the Teachers - Festival Liason Council scholarship; and 'Laura Armstrong with the Wingham and District Hospital Auxiliary Award. The big M’s (senior letters) were also distributed at the ceremony. Theses are handed out to students who have earned three intermediate awards for scholastics, athletics and activities or have earned two awards, one with double the points needed. The recipients were Laura Armstrong, Adam Beardsiey, Angela Bell, Emily Cardiff, Jeanette deBoer, Jenna Howatt, Bridget Kellington, Jontue Kuyvenhoven, Nikki VariDeWalle and Lindsay Willits. Morris grad Bridget Kellington was the recipient of the Morris ward award at F.E. . Madill’s commencement.
