at Duff’s United
On Trinity Sunday, those attending
Duff’s United Church were greeted
by Albrecht and Annalies
Ringgenberg. The crowd enjoyed the
reflection entitled. In The Name of
the Father, Son and Holy Spirit. This
was presented by Rev. Joan
Tuchlinsky.
The collection was gathered by
Murray Dennis and Brian McGavin.
Rev. Joan will be away at
conference this week.
A secretary is still needed for the
Walton Bluevale charge for June l.

Congratulations to Neil McGavin
who participated in the Healthy
Hearts Walk held on the boardwalk
at Goderich.
Neil had the second highest
amount in pledges for the
event.
Joining Neil for the all or some of
the five-km. walk were Marie.
Cathy, Shelley and seven of his
grandchildren.
Neil was the lucky winner of an

Graeme and Michael Craig joined
members of the Community Living
group to attend a Blue Jays game in
Toronto on Sunday.
This week is Shannon Craig’s
wedding and they will be busy.
Graeme will hopefully be getting
around all right after spraining

Ndrthside United Church. Vicki is
the daughter of Allan and Karen
Carter and granddaughter of Marie
Coults of Walton. Attending as
junior bridesmaid was Danielle
Ducharme, cousin of the bride,
daughter of Nancy and Greg
Ducharme.
Also attending the wedding were
Ross and Marg Bennett of
Walton.
Congratulations to Evan
Ducharme who participated in the
junior golf tournament sponsored by
the Optimists at the Wingham Golf
course. He was the winner of the
day.

They are easy family food that
teenagers and parents will enjoy.
RHUBARB JUICE
Hot pack 10 jars: process 10
minutes in boiling water.
Wash and trim tender stalks of
good colour. Cut into l/2" pieces.
Use half as much water as rhubarb.
Bring to a boil; cover and simmer 5
min. Prepare jars and lids in boiling
water canner. Strain rhubarb through
cheesecloth. Sweeten to taste.
Reheat to boiling and pour into
hot jars, leaving 1/2" head space.
Wipe jar rims. Apply screw bands
fingertip tight.
Process in boiling water 10
minutes; cool on counter overnight.
Test for seals; label and store.
This juice is great aS a summer
cooler using equal parts cranberry
juice, orange juice or apple juice
along with the rhubarb juice over ice
in a tall glass.
RHUBARB JAM
2-3 lbs. strawberry rhubarb
1 1/2 lbs. sugar
1/2 cup water
2 oranges, juiced and rind grated
Wash rhubarb, cut into small
pieces. Combine all ingredients.
Bring to a boil, 30 minutes
approximately, stirring occasionally.
Fill sterilized jars and seal. Makes 6
- 6 oz. jars. •
BROWN SUGAR RHUBARB
PIE
I cup brown sugar
1/4 cup all-purpose flour
4 cups rhubarb, 1/2" cut
Combine and let sit 15 - 20
minutes.
3 egg yolks beaten
1 tbsp, lemon juice
Combine and stir into rhubarb
mixture. Turn into unbaked 9" pie
shell. Bake at 400°F., 20 minutes;
reduce heat to 35O°F. Continue
baking until an inserted knife comes
out almost clean, about 20 minutes.
(Cover with foil if necessary).
Meanwhile beat three egg whites
with 1/2 tsp. vanilla and 1/4 tsp.
cream of tartar until soft peaks form.
Gradually add 6 tbsp, sugar, beating
until stiff peaks form. Spread over
hot filling, sealing right to the edges
of shell. Return to a 350°F. oven
until meringue is golden 12 - 15
minutes.
