Country Fare By Patricia Ham, Auburn School House Hoping yon will enjoy and use some of the recipes I will be giving each month. They have all been tested by me in my home, and will come from many sources. They are easy family food that teenagers and parents will enjoy. A delectable pie is an always welcome sight, and so welcome now the winter is almost over. Surprise everyone with one of these delicious creations. Well done FRENCH CHOCOLATE PIE 8" or 9" pie crust, baked 1/2 lb. marshmallows 1/2 cup milk 1/2 cup chocolate chips 1 tsp. vanilla 1/2 pt. whipping cream 1/4 cup chocolate milk powder Melt marshmallows in the milk over a medium heat; add chocolate chips and stir until melted. Let cool. Whip the cream until quite firm. Fold in vanilla and the chocolate milk powder, then gently fold chocolate mixture until well blended. Pour into pic shell and refrigerate until needed. not over­ night. ORANGE CREAM PIE 8"-9" baked pie shell 1 cup crushed peanut brittle candy 1 tsp. gelatin 2 tbsp, milk 1 cup mandarin orange sections, drained I tsp. vanilla 1/2 pt. whipping cream Combine gelatin and milk; let sit five minutes then warm to dissolve over boiling water. Mix orange sections (reserving a few for a garnish), vanilla and peanut brittle. Add dissolved gelatin and gently fold into stiffly-beaten whipping cream. Pour into pie shell, arrange reserved orange sections as a garnish. Chill until ready to serve. Some Brussels skaters received awards at the recent year-end party.
