People round-up rutabaga recipes for cookbook
Another world premiere turned up in Blyth
this year: a roundup of rutabaga recipes by
the great cooks of Huron County. There's
everything from appetizers and rutabaga/
rhubarb juice to salads, side dishes, soups,
suppers, and sweets. Even the dogs get their
own recipes - Shandy's Rutabaga Dog
Biscuits received an honourable mention
from the judges.
Prize Winning Rutabaga Recipes, a special
project of the Blyth Rutabaga Festival
features 100 tasty treats, many of which won
awards in baking contests in 1990 and 1991
with recipes co-ordinated and compiled by
Bev Elliott, Diane Radford and Elaine
Scrimgeour, editor Jane Gardner has
included turnip tales and rooted out rutabaga
facts that provide entertaining reading.
The village of Blyth is not only famous for
its leather mills, summer theatre festival,
shops, and annual steam thresher show, but
also for its rutabaga exports. Tons of
rutabagas are shipped each year from Blyth
throughout the United States and Canada. In
1953 and 1954, Blyth hosted a Rutabaga and
Agricultural Fair and after a lengthy
absence, the Blyth Rutabaga Festival
returned on June 22, 1990.
Now in its third year, this fun-filled
weekend includes the rutabaga baking
contest, giant garage sales, concerts, a
variety show, a family dance, a fishing derby
for children, sports activities and rutabaga
props, and a magnificent Saturday parade
down the main street. Held the fourth
weekend in June (June 26-28, 1992) the
Blyth Rutabaga Festival draws hundreds of
visitors each year.

top with a yellow inside, stores well and a
sweet taste when eaten raw; the turnip is
purple on top with a white inside, does not
store well and tastes better cooked. They
also differ in leaf, root detail and structure.
Other closely related vegetables are broccoli,
Brussels sprouts, cabbage, cauliflower,
collard, kale and kohlrabi.
The name rutabaga comes from the
Sweddish name “rotabagge” meaning baggy
or round root. Its correct botanical name is
Brassica napobrassica, but some people call
it a Laurentian, swede, or swede turnip.
Almost without exception, rutabaga
producers in Ontario grow the Laurentian
variety which was developed by Professor
Raymond of Guelph in the early 40's.
As markets expanded, the term “turnip”
began to confuse our yellow-fleshed
vegetable with smaller white-fleshed
summer tumip grown in the United States.
In 1967, Canada required the name
“rutabaga” to be used by all growers and
marketers, to make the necessary distinction.
The primary producers of rutabagas are
Scandinavia, Germany, Canada, Holland the
United States.

purchased from the late Russell Dougherty, a
long-time Blyth resident who was a pioneer
in the rutabaga industry.
Rutabagas are sometimes confused with
turnips, but rutabagas are the sweeter and
larger of the two. They are similar in shapes,
belonging to the same plant family - the
mustard family. Rutabagas and turnips are
two distinct plants, each with a different
taste. The root of a rutabaga is a purple on
