The Lucknow Sentinel, 1979-12-19, Page 18P*ge 18A—Lucknow Sentinel, Wednesday, December 19, 1979 Ideas for your maincourse SPAGHETTI WITH MEAT SAUCE Serves 250 or more REQUIREMENTS 1 very large range 3 - 10 gallon cooking pans 1 long handled wooden spoon to stir while sauce is cooking 1 bottle wine - for the Chef (he'll need it) INGREDIENTS 25 - 2 lb. packs spaghettini 73 = 28 oz. cans tomatoes (preferably Italian plum type) 14 - 13 oz. cans tomato paste 64 cups chopped fresh onions or 10 - 2 Ib. packs frozen chopped onions 1 medium bottle olive oil 21/2 cups dried basil 21/2 cups sugar 17/4 cups salt 1 head garlic 6 or 8 grinds, fresh pepper 20 lbs. hot Italian sausage meat ?uncased) 40 lbs. lean ground beef . In eight or ten batches over 'high heat sautee the meats., onions and garlic together in the oil until meat is lightly browned and onions are translucent. Divide equally among 3 large pans. Add tomatoes, tomato paste, basil, sugar, salt and, pepper, dividing all ingredients, equally between the pans. Bring all to a boil. over high heat then reduce heat to a medium simmer and simmer for 2 l=ours stirring 'often and ,mashing large 'tomato pieces as much as possible. w Transfer quantities of ' sauce between pans to assure equal blend of ingredients. THE PASTA Cook 4-6: pounds of pasta at a time in large kettles of salted boiling water only until it is half cooked. 'Drain, then. rinseand cool in ,.two changes of fold water. When the pasta is cold and rinse water is clear, drain it and put aside in containers until serving time. At serving time have two large- containers of Lightly salted boiling water going over high heat. Add pasta, alternating from one container to the other and cook just until it heats through. Drain well and serve. TIMELY BEEF POT ROAST WITH VEGETABLES 1/4 cup flour 1/2 tsp. salt 1/8 teaspoon pepper 1 blade pot roast. (bone in 2" thick 3 lbs.) 2 tablespoons fat water 12 small carrots scraped 12 small onions 1/4 cup flour Turn electric fry pan temperature control knob to 400 degrees.: Preheat skillet. Combine just three ingredients: coat meat with mixture; heat fat in skillet and brown meat on both sides; drain off excess fat. Turn temperature control knob to simmer. Add 1 cup water, cook covered 21/2 hours, adding water as needed. Keep 1/2 inch in pan. Add vegetables, cook 30 minutes or till meat is tender. Lift from skillet. Turn temperature control knob to 230 degrees, add 2 cups water to liquid..Blend flour with 1/2 cup water,add to hot. liquid. Cook and stir till thickened. Makes six delicious servings.
