DUCKLING ALSATIAN
(Makes 8 sm)
2 ducklings, 4-5 pounds each
Spy sauce
salt and pepper
lteaspoon ground caraway seed
'/2 pound bacon, diced
1/2cup chopped onion
1 tea.spoon whole caraway seeds
2 cans (1 lb. each) sauerkraut
1 cup white wine
2 mAdium apples, peeled and cored
1/4 Clip brown sugar
1 laopotohm grated
1 package (1 lb.) breakfast pork oousugc
8app\oo. cored but left whole and unpeeled

Thaw ducklings in refriZetator for two days, or
under l water for several hours.
Preh.eat oven to 350 degrees F,
Remove neck and giblets from ducks. Trim
back -neck skin and remove excess leaf fat. Rub
outside skin with soy sauce. Sprinkle inside
,cavities with salt, pepper, nd ground caraway
sced. Scratch hreast of duck.lings with sharp fork
to assist seIfhastingprocess.
Place on a ruckin a shuUowbakiog pan and
roast %1/2'3hours.
Meanwhile, in a )nrge, heavy skillet 0rDutch
oven, saute bacon and onion until golden.

Grate 2 peeledapples into the mixture and
cook over rnediurn heat for 45mi.nutes.
Add brown sugar and potato. Stir well, and
cook 15mihutes longer.
Pan frsausages toa golden brown.
Peel flower ends of remaining apples down
about 1 inch and place lin o!3x9x2-inch baking
panpeeled end up, Bake 40-60 minutes, .'
depending on size oyapples, or just until tender.
Every ten minutes during baking time, press ,on
the peeled end with a fork and sprinkle with
sugar and ctnnamon At the end of the bakin
the, tqp will be flat and the core hole filled With
pressed apple •
At, atrvin`dmnm, place ducklings on a large
oval platter, withsauerkraut.
Garnish kraut with' sausages and pluCeupp|*o

Mix all the. ingredicnts and
about one hourat 350 degrees.

TURKEY LOAF PLATT '',
11/2 cups finely -chopped celery
3/4 cup chopped onion
1 cup melted butter
3 tablespoons all-purpose flour
11/2 teaspoons seasoned salt
11/2 teaspoons salt
IA teaspoon pepper
2 cups milk
5 eggs, beaten slightly
3 cups cooked, diced turkey
2 cups fine dry bread crumbs
2 tablespoons lemon juice
Saute celery and onion in butter until tender.
Blend in flour and seasonings. Add milk
gradually. Cook, stirring constantly, until
thickened; remove from flame. Blend. small
amount of hot mixture into eggs. Stir egg mix-
ture into remaining hot mixture,
Mix in turkey, bread crumbs and juice. Pour
into greased 9 X 5 x 3 - inch loaf pan. Bake in 350
•
degree gas or electric oven for 45 minutes to 1
hour. Serve with sauce.
SAUCE
1 cup dairy sour cream
1 cup mayonnaise
2 teaspoons e red Green Goddess Dressing.
Combine all ingredients.
Yield: 6-8 servings

TURKEY BUFFET CASSEROLE
4ounces medium wide noodles (2cups)
1 package frozen broccoli spears
3tbep.butter nrmargarine
3tbop.flour
lto[,salt
1/4 tsp. prepared mustard
1/4 typ.peppor
2cups milk
1 cup (1/4 lh,) grated cheese
2 cups cut up turkey
Y-2 cup slivered toasted almonds
Cook noodles in boiling salted water until
tender. Drain. Cook broccoli as label directs

until just tender. Dram. •
Dice broccoli stems, but leave flowerets whole.
Meanwhile, in saucepan over low heat, melt
buttor, stir in flour, salt, mustard, pepper and
milk. Cook, stirring constantly until thick and
smooth.
Remove from heat and stir in 'cheese until
melted. In greased shallow casserole arrange
noodles, broccoli flowerets on tre ing them
lightly into sauce. Sprinkle with almonds.
Bake, uncoat 350 de for 15 minutes
or until hubhlinghot. Yield: 4'Gservings.
