Secrets from the
flue Barn Kitchen

After Christmas comes the
problem of what to do with left-
overs.
This may seem a little late
for Christmas but New Year's
Day is coming up and you can
have parties with casserole sup-
pers from good and delicious
bits of turkey. There are so
many simple recipes for left
overs. I will give one now and
a few suggestions for party
snacks. All the best in the New
Year to you, my readers: --
Christmas now is a memory,
Of a festive day well spent,
Your letters and cards gave me
such a lift
They were sincerely "A Won-
derful Gift".
TURKEY CASSEROLE
In a baking dish, arrange a
layer of leftover turkey stuf-
fing, a thin layer of cranberry
sauce, a layer of mixed white
and dark turkey bits or what-
ever you have -- and a layer of
cold turkey gravy. Repeat these
layers until you have used up
the leftovers. With 1 cup of
bread crumbs stir 3 tbsp. melt-
ed butter. Use this to top the
casserole. Bake 20 min, in a
400 degree F. oven.

TUNA DIP
Add cup milk to 1 enve-
lope Sour Cream Sauce Mix,
stirring with a fork until smooth.
Blend in 1 can (7 oz.) drained
and flaked tuna fish, z cup
mayonnaise, 2 tablespoons each
Instant Minced Onion and lemon
Juice, z teaspoon Worcester-
shire Sauce, and 1/8 teaspoon
Cayenne Pepper. Chill. Makes
2 cups.
DEVILED DIP
1 package Sour Cream Sauce
Mix
el cup milk
1 can (22 oz.) deviled ham
4 cup sweet pickle relish, drain-
ed
2 teaspoons Worcestershire
Sauce
1 teaspoon Prepared Mustard
Add milk to sour cream
sauce mix, stirring with a fork
until smooth. Blend in other
ingredients. Chill and allow
flavours to blend. Yield: 1 cup.

CRUNCHY BEEF BALLS
1 pound ground beef
-`z cup fine dry bread crumbs
i cup evaporated milk, un-
diluted
3 tablespoons Sesame Seed
1 teaspoon salt
1/8 teaspoon Black Pepper
1 tablespoon butter
1 envelope Mushroom Gravy
Mix
3/4 cup water
1/4 cup ketchup
Mix together ground beef,
'crumbs, milk, sesame seed,
salt and pepper; shape into tiny
balls (or pat meat out 1 -inch
thick and cut into different
shapes). Cook meat balls in
butter until brown on all sides.
Meanwhile, empty contents of
mushroom gravy mix into small
saucepan, gradually stir in wa-
ter and ketchup. Bring to a
boil, stirring constantly. Pour
over meat balls. Serve piping
hot with crackers, melba toast,
or small thin slices of rye bread.
Yield: 4 to 5 dozen small meat
balls.

CORAL CREAM DIP
FOR SHRIMP
1 tablespoon water
el teaspoon Horseradish
1/8 teaspoon Lemon Peel
1 envelope Sour Cream Sauce
Mix
4 cup milk
cup ketchup
Combine water, horseradish
and lemon peel in a small bowl.
Let stand 5 minutes. Add sour
cream mix, milk and ketchup.
Blend together thoroughly.
Chill. Yield: about 3/4 cup.
Enough for dunking 3 dozen
cooked shrimp, depending on
size.

GOLDEN SWISS FONDUE
1 can (141 oz.) evaporated
milk
4 tblsp. prepared mustard
1 tsp. Worcestershire sauce
i tsp. salt
1/8 tsp. garlic powder
1 lb. process Swiss cheese,
grated
Scald undiluted evaporated
milk in top of double boiler.
Add mustard and seasoning,
beating with fork or wire whip
until blended and slightly
thickened. Stir in cheese.
Cover over hot water until
cheese melts. Place in chaf-
ing dish or over candle warmer
to keep hot. Use chunks of
French bread or wedges of ap-
ple to dunk into cheese mix-
ture or spoon over crisp toast or
crackers. Yield: 4 to 6 servings.
SOUP'N CHEESE DIP
1 can (101 oz.) tomato soup
(undiluted)
1 tbsp. prepared mustard
1 teaspoon Worcestershire sauce
Dash of Cayenne pepper
z 1b. process American Cheese,
grated
Combine all ingredients.
Heat over low heat stirring oc-
casionally until cheese is melt-
ed. Serve as a dip or over
toast. Yield: 4 to 6 servings.
Along with all of these par-
ty snacks don't forget to finish
off with your delicious Christ-
mas cakes and cookies.

Celebrate Golden Wedding
A family dinner was held at
Danny's Restaurant on Tuesday
evening in honor of Mr. and
Mrs. Norman T. McLaughlin,
who will be married 50 years
next month.
Mr. and Mrs. McLaughlin
were married at the home of
her parents, the late Mr. and
Mrs. A. C. Hutchison, in Ford-
wich on January 12. The quiet
ceremony was witnessed by
members of the two families
and was performed by Rev. A.
B. Dobson. The groom of 50
years ago was the son of Mr.
and Mrs. J. McLaughlin of
Fordwich.
The young couple took up
farming and for 18 years lived
on a farm near Fordwich. They
moved to a farm in Turnberry
and later spent about seven
years just south of Wingham,
on the present Bob Johnston
farm, R.R. 4, Wingham. They
moved to Wingham in 1945 and
Mr. McLaughlin worked with
the department of highways un-
til his retirement,
Mr. McLaughlin is a mem-
ber of the Masonic Lodge and
Lebanon Chapter, R. A. M. , a
past master of the Fordwich
Lodge, and a member of the
Oddfellows' Lodge. Mr. and
Mrs. McLaughlin are members
of Wingham United Church and
she belongs to the Women's In-
stitute.
He has two brothers, Harvey
McLaughlin of Whitby and Ar-
chie of Kirkland Lake, and
three sisters, Mrs. D. (Marg-
aret) Bailey of Roseville, Mich.,
Mrs. Elsie Pfile of Mt. Clem-
ens, Mich. and Mrs. S. (Anna)
Moore of Ajax. Mrs. McLaugh-
lin has a sister, Miss Nell Hut-
chison of Toronto and fourbro-
thers, J. A. Hutchison of Grims-
by, Clare of Toronto, Harold of
Detroit and Jack of Vancouver.
There are five children, Art
of Larder Lake, Keith of Wing -
ham, J. Muir of Sarnia, Jack
of Ottawa and Miss Meta Mc-
Laughlin of Toronto, and six
grandchildren.
Their children were all home
for the celebration on Tuesday
as well as Miss Nell Hutchison,
J. A. Hutchison and Clare Hut-
chison. The anniversary cake
was iced by a sister-in-law,
Mrs. A. K. Hutchison of De-
troit, whose husband died in
1964.

the same day Mr. and Mrs.

Mrs. Wm. Darling of Gorrie.
Christmas Day guests of Mr.
and Mrs. Norman Newans were
Mr. and Mrs. Alex Marshall
and Mr. and Mrs. Jim Marshall
and family, all of Stratford,
Mr. and Mrs. Howard Gowing
and John of Tiverton, and Mr.
and Mrs. Wm. Curie of the
village.
Mr. and Mrs. Wm. Mulvey,
Jeff and Cindy, spent Christmas
Day with her grandparents, Mr.
and Mrs. James Vittie of Ford-
wich, and his parents, Mr. and
Mrs. Harry Mulvey.
Mr. Ira Leeson and Johnny
had Christmas dinner with Mrs.
Leeson in Walkerton Hospital.
Mrs. Leeson is showing some
improvement after a stroke suf-
fered a number of weeks ago.
Mr. and Mrs. Charlie Scott
and family and Mr. Alex Inglis
attended a postponed family
dinner at the home of Mr. and
Mrs. Jim Smith at Brussels, on
Sunday.
Mr. and Mrs. John Tyler of
St. Marys spent Christmas with
Mrs. Adam Darling. Miss Isa-
bel Darling of Kitchener is also
home for the holidays.
Miss Sharon Merkley, nurse -
in -training in the K -W hospital,
Kitchener, spent Christmas
with her parents, Mr. and Mrs.
Wm. Merkley.
Mr. and Mrs. Orval Cam-
eron and family visited on Sun-
day at the home of Mr. and
Mrs. Jack Laughlin of Mount
Forest.
Mr. and Mrs. James Darling
and family enjoyed a family
dinner at the home of her par-
ents, Mr. and Mrs. Fraser
Haugh, near Wroxeter.
The air was filled with sing-
ing on Tuesday evening of last
week, when six local girls went
to homes in the community for
some pleasant carol -singing.
Wendy and Debbie Busby, Grace
and Anne Hohnstein, Sharon
Cameron and Karen Dickson
are to be congratulated on
some fine singing, and bringing
a few moments of joy into a
number of homes,
Mr. Robin Steven is spend-
ing this week at Boys' Parlia-
ment at Kingston, as a repre-
sentative from the Bruce Pres-
bytery of the United Church.
Mr. Robert Harper, home on
leave from RCMP training head-
quarters in Western Canada,
spent the Christmas holiday
with his parents, Mr. and Mrs.
George Harper of Carrick Twp.
