FERRIER TAKES
GUELPH CHAIR
Dr. Leslie Ferrier, a food scientist,
has been appointed to the University of
Guelph's Ontario Egg Producers chair,
which is funded by the Ontario Egg
Producers Marketing Board.
Egg board chairman Bill Scott has
presented a cheque for $1 million to
university president Burt Matthews to
initiate a trust fund. The interest will
support Ferrier's salary and provide
technical staff, research assistants, and
some research funding for a minimum
of 10 years. Additional research fund-
ing will be obtained from other sources.
Ferrier will work closely with both
the egg producing and egg processing
industries to develop new uses for eggs
in both food and non -edible products.
"Our ultimate objective will be to
capture a larger share of the world mar-
ket by putting Ontario egg producers
and processors in a more competitive
position," Ferrier says.
The egg board estimates that if
research can encourage industry to
"use eggs instead" and increase egg use
by one egg per bird each year in Canada,
it would represent increased revenue of
$2 million a year.
Ferrier has an undergraduate and
graduate degree from the University of
Guelph and a doctorate in food science
from the University of Wisconsin.0

ENDING 35 YEARS
The Grey -Bruce Livestock Co-
operative completes 35 years of suc-
cessful stocker and feeder cattle sales at
the Wiarton sales facilities this year.
In 1952, the first year, 1,270 head of
cattle sold for$214,700. In 1986, a total
of 13,700 head sold at the five auctions
and grossed $9,436,000.
Over the 35 years, reports the co-
operative, the quality of cattle sold has
improved as more farmers use proven
bulls, plan cross -breeding programs,
and improve feeding and management
skills. Cattle offered for sale are 30 per
cent Hereford cross, 50 per cent Charo-
lais cross, and the balance is made up of
other crossbred and purebred cattle.0
