Combine with corn meal. Beat egg, add buttermilk, applesause, and cooking oil. Add to dry ingredients and stir quickly until mixed but still lumpy. Fill greased muffin tins two-thirds full. Bake about 20 minutes at 425 degrees F. Make 12 muffins.0 Amber Apple Desert Filling: 5 cups pared, cored, sliced apples (7 medium) 1/4 cup sugar 2 T flour 1/4 to 1/2 t cinnamon 1/4 t salt 1 t vanilla 1/4 cup water Topping: 1/2 cup flour 1/2 cup sugar 1/2 t baking powder 1/4 t salt 1 egg 1 T melted butter Toss apples with combined sugar, flour, cinnamon, and salt. Combine vanilla and water, add to apples, toss. Turn into an 8 x 8 x 2 inch baking pan. Mix dry ingredients for topping. Beat egg lightly, combine with cooled melted butter. Add to dry ingredients, mix with a fork until just dampened. Spoon mixture onto apples in 9 portions. Bake at 375 degrees F for 35 to 40 minutes. Serve warm.0 There are about 3 medium apples in a pound, about 5 pounds in a 4 -quart bas- ket, and about 7 pounds in a 6 -quart basket.
