Doug Dickie, an OMAF beef spe- cialist from Markdale who spoke at all three information days, focused on the use of by-products and unusual feeds for cattle. Before using these feeds, consider a number of factors, Dickie said. The most important is the avail- ability and nutrient content relative to the price. A simple way of determin- ing the value of feed is to take the price per tonne and divide it by the energy or protein percentage. Dickie listed a number of products that can be used: apple pomace, bak- ery waste, beet pulp, carrots, onions, and potatoes. These products should be evaluated for moisture content., nutrient consistency among loads, and the length of time needed for cattle to adapt to a ration. Carrots, for exam- ple, are a very palatable food source and high in moisture, but if fed long enough at high levels they will cause yellow fat in feedlot cattle, resulting in carcass grade discounts. Gerald and Fred Van Osch, beef feedlot owners from Crediton in Huron County, were featured in an OMAF video. The Van Osch brothers manage 1,500 acres and handle between 1,200 and 1,500 beef cattle. All the feed for the cattle is grown on the farm. The video highlighted the advantage of weighing feed and cattle to monitor efficiency. The Van Osch's were on hand to comment on the video and answer questions from producers. Dr. Dave Mowat of the University of Guelph presented some of his forage research findings. There has been a renewed interest in forage feeding, he remarked, especially in the beef indus- try, where forage feeding has a proven advantage in obtaining maximum gain in cattle during the early period of growth. A beef and hog producer and former president of the Waterloo Cattlemen's Association, Stewart Cressman discus- sed the management decision-making process he goes through in his own
