Consumers have changed, the market has changed, and the days when all hogs were pooled and "a pig is a pig is a pig" are over, speakers from Don Collis, general manager of fresh meats for Quality Packers to Paul Knechtel, CEO of Ontario Pork told producers. Knechtel perhaps summed up the meeting best when he said "we can't say 'my pig is as good as yours' and if we all pool them, somebody will buy them". The market today is complex, Knechtel said. The processor, for instance, has three different markets whether for export, further processing or the retail market, he said. But the retailer also has three kinds of customers: those with enough money that quality is the only thing that matters; a group with money but no time which is looking for foods with quick preparations times, and lower income people for whom price is essential. "If there are a lot of different kinds of customers, why do we have a pooling mentality," Knechtel said. "Producers have a pooling mentality and the processor has a pooling mentality." Picking up on Collis's answer to a question from Vince Hulshof that only 60 per cent of hogs received by Quality Packers met the company's grading targets, Knechtel said producers have a tremendous opportunity to make the other 40 per cent meet those targets. "While we're trying to get you the best prices, you have to make sure that 100 per cent of your hogs are hitting the target on the grid of your packer."
