with a spigot at the bottom to fill the
metal containers.
During the maple syrup season,
the Gingerich family puts in long
days. The day's syrup might be
boiled bynine at night or they might
boil until midnight.
Ed ,syrup is of a light colour
and nice quality which is
probably due to the farm's
drainage. Ed says he's never had a
dark crop which you plight get if the
bush has a wet bottom.
All the syrup is sold at his door,
costing about $10 for one litre and up
to $34 for four litres.
Once the maple syrup season is
over, Ed Gingerich pays attention to
working and planting about 100 acres
of corn and grain. His mixed
operation of cow -calf and farrow -to -
finish is situated on a farm with creek
flats, maple bush and cropland.
Later in the spring, Ed will look
the bush over for trees he can use for
firewood in two year's time, but by
then the sap run will be over for
another year and the bush will show
signs of spring, such as leeks and
trilliums.0
