The day's syrup might be boiled bynine at night or they might boil until midnight. Ed ,syrup is of a light colour and nice quality which is probably due to the farm's drainage. Ed says he's never had a dark crop which you plight get if the bush has a wet bottom. All the syrup is sold at his door, costing about $10 for one litre and up to $34 for four litres. Once the maple syrup season is over, Ed Gingerich pays attention to working and planting about 100 acres of corn and grain. His mixed operation of cow -calf and farrow -to - finish is situated on a farm with creek flats, maple bush and cropland.
