butter, brown sugar and granulated
sugar until light and fluffy; blend in
egg. Stir together flour and baking
soda; add to butter mixture.
Shape dough into 1 -inch balls. Stir
together egg white and water; beat
with fork until foamy. Roll balls in
egg white mixture, then in crushed
cereal. Place on ungreased cookie
sheet; press with thumb or finger tips
in centre making an indentation.
Bake 8-10 minutes or until cookies
are set. Remove from oven;
immediately press peanut butter cup
onto each cookie. Cool 1 minute;
remove carefully from cookie sheet to
wire rack. Cool completely.
CHOCOLATE PEANUT BUTTER
THUMBPRINTS
1 2/3 cup peanut butter chips,
divided
1/2 cup butter or margarine,
softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 cup cocoa
1/2 tsp baking soda
additional granulated sugar
Heat oven to 375°F. In small
microwave -safe bowl, place 1/2 cup
peanut butter chips. Microwave at
High (100%) 30-40 seconds or just
until chips are melted and smooth
when stirred; set aside.
In large mixer bowl, beat butter,
granulated sugar, brown sugar, egg
and vanilla until light and fluffy. Add
melted peanut butter chips; beat well.
Stir together flour, cocoa and
baking soda; stir into peanut butter
mixture until well blended.
For each cookie, shape 1 tbsp
dough into ball; roll in additional
granulated sugar. Place balls on
ungreased cookie sheet; with bottom
of glass, flatten cookies to 1/4 inch
thickness. Using thumb, make
indentation in centre of each cookie.
Bake 6-8 minutes or just until set.
Remove from oven. If necessary,
using up of spoon, press indentation
in centre of each cookie; immediately
place 1 tsp peanut butter chips in each
indentation. Soften 1-2 minutes;
spread melted chips into swirl.
Remove from cookie sheet to wire
rack. Cool completely.
SECRET KISS COOKIES
1 cup butter or margarine, softened
1/2 cup granulated sugar
1 tsp vanilla extract
1 3/4 cups all-purpose flour
1 cup finely chopped walnuts
1 pkg (6oz) Kisses milk chocolate
powdered sugar
In large mixer bowl, beat butter,
granulated sugar and vanilla until
light and fluffy. Add flour and
walnuts; beat on low speed of electric
mixer until well -blended. Cover;
refrigerate dough 1-2 hours or until
firm enough to handle.
Remove wrappers from chocolate
pieces. Heat oven to 375°F. Using
approximately 1 tbsp of dough for
each cookie, shape dough around each
chocolate piece; roll to make ball. (Be
sure to cover each chocolate piece
completely.) Place on ungreased
cookie sheet.
Bake 10-12 minutes or until
cookies are set but not brown. Cool
slightly; remove from cookie sheet to
wire rack.
While still slightly warm, roll in
powdered sugar. Cool completely.
Store in tightly covered container.
Roll again in powdered sugar
just before serving.
CRUNCHY CHOCOLATE
CARAMEL PECAN COOKIES
1 cup margarine
3/4 cup brown sugar, lightly
packed
1/2 cup granulated sugar
1 egg
1 1/2 tsp vanilla
2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
6 squares semi -sweet chocolate,
chopped
1 cup caramels, quartered
3/4 cup coarsely choppcd pecans
Preheat oven to 375°F. Cream
margarine, sugars, egg and vanilla in
large bowl on medium speed of
electric mixer until light and creamy.
Sift together flour, soda and salt.
Add to creamed mixture, beating at
low speed until blended. Sur in
remaining ingredients. Drop dough by
heaping spoonfuls onto a baking sheet
greased with margarine.
Bake for 9-12 minutes or until
light golden. Allow to cool for 5
minutes on baking sheet, then remove
to cooling rack.0
