measure, combine half the remaining
sugar with cornstarch. Blend in milk
and cream until smooth. Microwave
on Medium (50%) power for 4 to 6
minutes or until thickened, stirring
every 2 minutes.
Whisk egg yolks with remaining
sugar. Stir in a little of the hot sauce.
Whisk back into remaining sauce.
Microwave at Medium for 90
seconds to 2 minutes or until thick,
stirring at 1 minute intervals. Stir in
butter, vanilla and salt. Let cool for
10 minutes, stirring often. Spread in
separate shallow pan, cover lightly
and freeze until firm.
About 1 hour before serving,
break custard into chunks and place
in food processor. Add frozen berries,
breaking up any Targe pieces. Process
until smooth, scraping down sides of
bowl once or twice with spatula.
Spoon into container with tight -fitting
lid. Freeze about 45 minutes or until
firm enough to scoop. Serve with
halved fresh berries.
Alternatives: Whole raspberries
may be used in place of strawberries
if desired. For a soft ice cream, serve
immediately after processing.0
