The Rural Voice, 1995-12, Page 39CRANBERRY -CITRUS KUCHEN 3 1/2 cups (875 ml) all-purpose flour 1 envelope quick rise instant yeast 1 cup (250 ml) granulated sugar 1 cup (250 ml) mixed glaced fruit or peel 1 1/2 cups (375 ml) fresh or frozen cranberries 1/4 tsp (1 ml) salt 1 cup (250 ml) orange juice 2 tbsp (25 ml) grated orange rind 1/2 cup (125 ml) butter 4 eggs Set aside 1 cup (250 ml) flour from total amount. Mix remaining flour, yeast, sugar, glaced fruit, cranberries and salt. Heat orange juice, orange rind and butter until hot to touch, 125°F -130°F (50°C -55°C). Stir hot liquids into dry ingredients; stir vigorously. Stir in eggs. Mix in enough reserved flour to make a thick, smooth batter. Stir batter for two minutes. Spoon into a greased 10" (25 cm) bundt or tube pan. Cover and let rise about 40-45 minutes. Bake at 350°F (180°C) 40-50 minutes or until cake tester inserted in centre comes out dry. Cool on wire rack. Remove from pan and cool completely. Sprinkle with icing sugar, if desired. Garnish with cranberries and fresh mint if desired. PUMPKIN CRANBERRY MUFFIN SQUARES 2 cups (500 ml) all-purpose flour ltbsp (15 ml) pumpkin pie spice 2 1/2 tsp (12 ml) baking powder 1/2 tsp (2 ml) baking soda 1/2 tsp (2 ml) salt 3/4 cup (175 ml) chopped fresh cranberries 1/2 cup (125 ml) chopped walnuts 1 egg 2/3 cup (150 ml) packed brown sugar 1/2 cup (125 ml) orange juice 1/2 cup (125 ml) milk 1/4 cup (50 ml) vegetable oil 1 tbsp (15 ml) grated orange rind 3/4 cup (175 ml) cooked pumpkin puree Topping: 1/4 cup (50 ml) granulated sugar 2 tbsp (25 ml) all-purpose flour 1/2 tsp (2 ml) pumpkin pie spice 1 tbsp (15 ml) butter, softened To prepare topping combine sugar, flour, pumpkin pie spice and butter; set aside.
