Japanese cattle
breed wins in
taste, tenderness
In cattle breeding in recent
years, cattlemen have believed
that bigger is better but carcass
tests of Japanese Wagyu cattle
across North America have been
proving that small can be
beautiful ... and tender and
tasty.
Carcass tests recently
completed at Lethbridge
Research Station using Wagyu
cattle topped North American
bred cattle with 82 per cent of
the Wagyus grading triple A,
the highest designation in the
Canadian grading system.
Of a total of 85 animals tested
at Lethbridge, 63 were
continental European and
British cross -bred animals. The
remaining 22 were three-quarter
Wagyu, offspring of full-
blooded Wagyu bulls and half
Wagyu females. Animals were
fed until they were 17 months
old with an average slaughter
weight of 1,100 pounds. Eleven
per cent of the continental
crosses graded triple A.
The Wagyus has an average
backfat of 11.1 mm compared to
14.5 for the continental crosses.
Meanwhile at Washington
State University testing of 20
Wagyu sires is underway to see
which bulls produce the best
carcasses.
Jerry Reeves, animal scientist
at the university says there is a
place for these animals in the
American meat chain. Most of
the Wagyu carcasses in the U.S.
are sold to expensive restaurants
or to Japanese buyers. "Our goal
is to try to develop this market
and send this meat to Japan and
to the high end restaurants."
Last year the U.S. sold about
one million carcasses to Japan.
About 80 Wagyu were
recently imported into the U.S.
to expand the gene pool.0
