the level of heat and moisture in the
kitchen, reducing the environment for
bacterial growth.
Only ingredients from approved
or inspected sources may be used in
preparation of food for sale. No
ungraded eggs can be used. Eggs
may have hairline cracks, only
visible when the egg is candled,
which can allow contamination
inside the shell. Eggs not properly
washed can carry bacteria on the
shell which can get into the food
during preparation.0
Rabbit high in
protein, low in fat,
growers hear
Rabbit meat is higher in protein
and lower in fat than other
commercial meats, Dr. Richard
Spratt told the seventh annual Rabbit
Congress at Milton in July.
Dr. Spratt, director of research and
technology for Ralston Purina
Canada, studied representative breeds
from a number of Ontario rabbit
farms starting in August 1994 in
making his discovery. He is currently
doing further study regarding the
presence in rabbit meat of the
desirable Omega-3 fatty acid known
as linoleic acid which medical
authorities say reduces threats posed
by normal cholesterol.
The scientific tests will allow
rabbit growers to label their products
with nutritional content information
to attract health -conscious
consumers.
Art Lawson, manager of the Rural
Business Development Unit of
OMAFRA told growers that the
average Canadian consumer is older,
more health conscious and ready to
try something new. Rabbit meat may
fit that bill.
Nearly 79,000 rabbits were
processed in Ontario in the first three
months of 1995 yet visitors to a
booth operated by the Ontario
Commercial Rabbit Growers at the
Congress complained it is still hard
to find where they can get the meat.
