There is nothing like the taste of
warm, fresh -from -the -oven muffins.
A family favourite, they are simple
to prepare and offer a nice change
at breakfast, over coffee break or as
a late night snack.
BLUEBERRY OAT MUFFINS
1 cup oatmeal
I cup buttermilk or sour milk
1 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup lightly packed brown
sugar
1 egg, beaten
1/4 cup melted margarine
1 cup blueberries or saskatoons,
fresh or frozen, thawed and well
drained
Combine oats and milk in small
bowl. Let stand. Combine flour,
baking powder, soda, salt and brown
sugar. Stir well to blend.Add egg and
melted butter to oat mixture. Mix
well.
Add oat mixture all at once to dry
ingredients. Stir just until all
ingredients are moistened.
Gently fold in blueberries. Fill
well -greased muffin cups 3/4 full.
Bake at 400°F for 15-22 minutes.
RHUBARB MUFFINS
1/4 cup margarine or oil
1 egg
1/2 cup white sugar
1 cup rhubarb, chopped
1/2 cup milk
3 tsp baking powder
1/2 tsp salt
1 1/2 cup flour
Mix and put into pans.
Topping:
1/2 cup brown sugar
3/4 tsp cinnamon
Sprinkle on top
Bake at 375°F for 20 minutes.
MORNING GLORY MUFFINS
2 cups flour
1 1/4 cup white sugar
2 tsp baking soda
2 tsp cinnamon
salt
Mix. Stir in:
2 cups grated carrots
1/2 cup raisins
12 cup nuts
12 cup
coconut
1 apple,
peeled, grated
In separate
bowl beat
together:
3 eggs
1 cup oil
2 tsp vanilla
Stir into flour
mixture until
batter is just
combined.
Spoon into
well greased
muffin cups
filling to the top.
Bake at 350°F
for 20 minutes.
BANANA
RASPBERRY
MUFFINS
Stir together
and set aside:
1 cup flour
12 tsp baking
soda
1/2tsp salt
1 tsp baking
powder
Mix together:
1 large banana,
mashed
2 tbsp milk
1 tsp vanilla
Mix together
until light and
fluffy:
1/4 cup
softened margarine
2/3 cup sugar
1 egg
Stir into dry ingredients, 1/3
banana mixture alternately with sugar
mixture. Place some batter in paper
lined muffin•tins. Place teaspoon of
raspberry jam in centre and more
batter on top.
Bake at 375°F for 20 minutes.
Muffins provide a nutritious snack, when the urge to
becomes too powerful to overlook.
3 cups white sugar
6 eggs
3 cups oil
6 cups Less 2 tbsp. milk
• 1 tbsp vanilla
1 tsp cinnamon
1 cup chopped dates
10 oz. can applesauce
Mix the 6 dry ingredients in large
bowl. In another bowl, mix the wet
ingredients, plus dates. Stir into dry
ingredients.
Bake at 400°F for 20 minutes.
WHOLE WHEAT AND APPLE
SAUCE MUFFINS
5 cups whole wheat flour
3 cups all purpose flour
2 tbsp salt
2 tbsp baking soda

PUMPKIN MUFFINS
4 eggs
2 cups white sugar
