foods sold at high-end stores. "The
specialty food industry has sky-
rocketed," Woodruff says. "It has
continued to grow through the
recession and the last five years has
boomed. These small start-up
companies are the ones producing the
jobs right now." The specialty food
producers have been leaders in co-
operative marketing, taking part in a
large fine food show in New York
each year.
Woodruff speculated, however,
that Vermont's leadership in
specialty food production may be
about to end as people in other areas
catch on to the potential of this niche
market.
Speaking at the Monday night
banquet was Bobbe Maines,
Vermont's Commissioner of Travel
and Tourism who spoke on the
state's efforts to attract tourists.
As well as providing examples of
practical experience, Market Grey -
Bruce set out to shift perceptions of
those taking part. A video shown the
first day demonstrated how people
get a set of perceptions (a paradigm)
which prevents them from seeing
new possibilities. The quartz crystal
watch, for instance, was actually
invented in Switzerland but Swiss
watchmakers were so bound to their
fine mechanical skills that they
ignored the invention. Texas
Instruments and Seiko picked up the
technology and today Switzerland
has very little of the world watch
market while Japan has a huge share.
"If you are not careful, your
successful past can block your way to
a successful future," the video said. It
talked about paradigm paralysis, "a
terminal disease of certainty".
Because of the inability of those
who are at the centre of today's
world to perceive different ways of
doing things, changes will likely
come from those who are on the
fringes who have nothing to lose by
accepting new ideas.

second day of the conference.
