Cover and roast at 350°F (180°C)
for 40 minutes. Uncover and roast 40
to 60 minutes, basting occasionally or
until juices are clear. Pour 1/4 cup
(50 ml) pan drippings into saucepan.
Mix cornstarch with remaining
apple juice and stir into drippings.
Bring to boil, stirring constantly until
thickened.
Spoon sauce over thick slices of
stuffed turkey breast roast.
CHRISTMAS TURKEY
1 ready to cook turkey (4-4 1/2 kg)
salt
pepper
marjoram
Stuffing:
1/2 Ib (250 g) mixed dried fruits
2 tbsp (30 ml) raisins
1 lb (500 g) diced apples
1 cup (250 ml) bread crumbs
3 tbsp (40 ml) nim
Wash turkey and dry. Sprinkle
cavity with salt, pepper and a little
marjoram. Mix stuffing ingredients
and fill turkey. Sew opening closed.
Rub skin with salt, thyme and
paprika.
Put turkey breast side up in broiler
pan. Cover with aluminum foil and
put on lowest rack in preheated oven
(350°F/180°C) for about 2 3/4 hours.
Mix:
1/2 cup (125 ml) red wine
1/2 cup (125 ml) orange juice
juice of 1 lemon
dash of tabasco sauce
Baste turkey with 4 tbsp (60 ml) of
this mixture after one hour cooking
time. Add 1/2 lb (250 g) peeled small
onions. Cover again with foil.
Baste turkey every 30 minutes
(use all the liquid). Cook until tender.
Remove turkey and onions to
platter and keep warm. Add water
and 1/2 cup (125 ml) sour cream to
drippings. Thicken with cornstarch
and season with salt and pepper to
taste.
TURKEY WITH RICE
1- 2 1/2 to 3 lb rolled turkey roast
1-10 1/2 oz can condensed chicken
broth
1 soup can water
1 cup (250 ml) uncooked long
grain rice
1/8 tsp (.5 ml) powdered saffron
2 tbsp (25 ml) snipped parsley
