PUMPKIN CAKE ROLL Combine first 6 ingredients 3/4 cup flour 1 tsp baking powder 2 tsp cinnamon 1 tsp ginger 1/2 tsp nutmeg 1/2 tsp salt Beat 3 eggs until thick and add 1 cup sugar. Stir in: 2/3 cup pumpkin 1 tsp lemon juice Fold in dry ingredients. Sprinkle with chopped walnuts. Bake in cookie sheet as for jelly roll 15 minutes at 375°F. Filling: 1 cup icing sugar 4 tbsp butter 6 oz. cream cheese 1/2 tsp vanilla Turn cake out of pan, spread with filling and roll. Crushed walnuts will be on outside of roll. PUMPKIN MUFFINS 4 eggs 2 cups white sugar 1 1/2 cups oil 1 3/4 cups pumpkin 3 cups all purpose flour 1 tbsp cinnamon 2 tsp baking powder 2 tsp baking soda 1 tsp salt 2 cups raisins Beat eggs slightly, add sugar, oil, pumpkin and beat thoroughly. Add dry ingredients and mix until smooth. Stir in raisins. Fill greased muffin cups 2/3 full and sprinkle tops with brown sugar. Bake 375°F for 15-20 minutes. PUMPKIN CHIFFON PIE Bake a 9" or 10" pie shell. Soak 1 package of gelatin in 1/4 cup cold water. Beat slightly 3 egg yolks and add: 1/2 cup sugar 1 1/4 cups cooked (can use canned) pumpkin 1/2 cup milk 1/2 tsp each cinnamon and nutmeg Cook and stir over hot water until thick. Stir in gelatin until dissolved, chill. Whip until stiff but not dry 3 egg whites. When pumpkin mixture begins to set sur in 1/2 cup sugar. Fold in egg whites. Fill the pie shell. Chill to set. Serve with whipped cream. STEAMED PUMPKIN PUDDING Cream: 1/2 cup butter 1/3 cup brown sugar 1/3 cup honey Beat in: 2 eggs Add: 1-14 oz can pumpkin 3 tbsp cream or evaporated milk Stir together: 2 cups flour 1/4 cup bran 2 tsp baking powder 1 tsp each ginger, mace and nutmeg Add to creamed mixture, stirring well.
