2 eggs beaten.
Mix and spread over base. Sprinkle
the reserved first mixture over the top
of filling, then sprinkle with sugar and
cinnamon. Fresh plums may also be
used. Bake at 375°F for one hour.
RHUBARB JUICE
6 cups rhubarb, cut in l" pieces
2 cups water
1 cup sugar
2 tbsp lemon juice
Simmer rhubarb and water in a
covered saucepan about five minutes
after mixture comes to boil. Strain.
Add required amount of sugar and
lemon juice. Sur until sugar is
dissolved. Chill.
Combine the juice with an equal
measure of fruit juice (orange, apple,
pineapple, etc.) for a tasty rhubarb
cocktail. For a sparkling punch add 2
parts ginger ale or club soda to one
part rhubarb cocktail.

NO COOK STRAWBERRY -
RHUBARB JAM
1-1/2 cup crushed strawberries
(fresh or frozen)
1 cup chopped rhubarb (fresh or
frozen)
4 cups sugar
3/4 cup water
1 box fruit pectin powder
Measure fruits into a large bowl.
Add sugar to fruit and mix well. Let
stand 10 minutes.
Combine water and fruit pectin
crystals in a small saucepan. Bring to
a boil for one minute, stirring con-
stantly. Stir pectin into fruit mixture
and continue to stir for 3 minutes. (A
few sugar crystals will remain.)
Pour into clean jars or plastic
containers, cover with tight lids and
let stand at room temperature until set
(that may take up to 24 hours). Store
in freezer, or in refrigerator for up to
3 weeks.0
