Eating more foods that are low in fat does reduce the risk of heart dis- case. But contrary to Mr. Vos' claim, high density lipoprotein (HDL) is not the culprit, nor is it found in saturated fat. Rather, HDL travels in the bloodstream, and plays a role in removing cholesterol from the body.
