Remove the stems (save them for
soup). Place the buttons in a sauce
pan with 1 tablespoon water.
Cook over high heat for 3 min-
utes, moving the pan back and forth
constantly. Then place the mush-
rooms in a bowl, to marinate for 2
hours in
114 cup salad oil
//2 cup lemon juice
freshly ground pepper
1/4 tsp. thyme
114 tsp. tarragon
Just before serving time melt in a
skillet 3 tablespoons butter
Add 20 scallops
Saute gently until they are lightly
golden, about 5 minutes. Lift the
mushrooms from the marinade and
arrange them stem side up in a
broiling pan. On each one, set a
sauteed scallop, and on top of that, a
small circle of
Camembert cheese
Secure all with a toothpick. Spoon
the marinade over them, and place
them under the broiler at 450° for 5
minutes. Serve piping hot.
One quick final note for this
month. We had a very successful
garden party despite the weather.
About 30 avid gardeners arrived amid
a heavy downpour but the spirits
were not dampened. We dove into a
fabulous potluck lunch. (I think next
time I am going to request a recipe
exchange.) The rain lifted and after
lunch we trooped out and began
exchanging plants, ideas and advice.
There were plenty of perennials,
ground covers and newly started
tomato plants. There were even a
few we couldn't identify but these
plants were scooped up and the new
owners will have to let the rest of us
know next year how they fared. In a
couple of hours it was all over and
just after the last car drove down the
lane the heavens parted and a blast of
hail and heavy rain broke over the
garden. A rather damp day for
people but ideal for plants.0
