by rolls and lots of rye bread and
cheese it would be a warming fall
feast for both the eyes and the tummy.

Pumpkin Pie
Unbaked 9-10" (23-25 cm) pie shell
2 cups mashed pumpkin (500 ml)
1 cup sugar (250 ml)
1 cup sour cream (250 ml)
3 eggs well beaten
2 tablespoons molasses (30 ml)
2 tablespoons melted butter (30 ml)
1 teaspoon vanilla (5 ml)
1/2 tsp.each nutmeg, cinnamon (2 ml)
1/8 teaspoon cloves (0.5 ml)
whipped cream
1 tbsp. chopped preserved ginger
Prepare pastry. Thoroughly
combine pumpkin, sugar, sour cream,
eggs, molasses, butter, vanilla and
spices and pour into the unbaked pie
shell. Bake at 350 F. (180 C) for 45
minutes or until well set. Garnish
with whipped cream and ginger. To
make a chiffon pumpkin pie, omit the
sour cream and beat 2 cups (500 ml)
of whipping cream and fold into the
pumpkin mixture. Bake as above.
Now for the more practical side.
For those of you who are already
dieting in preparation for the festive
Christmas season here is a casserole
with a minimum of sugar and lots of
flavour.
Pumpkin Pineapple Casserole
3 to 4 cups mashed cooked pumpkin
(750 ml)
3 tablespoons dry sherry (45 ml)
3 tablespoons brown sugar (45 ml)
6 tablespoons butter (90 ml)
1/2 cup drained crushed pineapple
(125 ml)
1/4 teaspoon nutmeg (1 ml)
1/2 teaspoon salt (2 ml)
Mix all the ingredients while warm
and beat until well blended. Bake in a
greased casserole dish at 425°F for 15
minutes. This can be made a day
ahead and reheatcd.0
