seed heads. This also allows us to
harvest the rhubarb longer. Rhubarb
can be grown from seed, but it takes
an extra year to get established.
Rhubarb can be forced for winter
enjoyment, but I have never tried it
since we get our fill all summer long.
Freezing is a simple matter. It
involves washing the stalks, peeling
the more coarse ones, cutting it into
suitable lengths, and freezing it in
serving sized plastic bags. Some
books recommend adding one part
sugar to every four to five parts of
rhubarb, but I have found packing
without sugar to be equally successful.
And now for that taste tempting
rhubarb custard pie. This recipe was
given to me many years ago by a very
nimble fingered friend of mine. I can
say that because she was a typesetter
for the weekly newspaper, the Huron
Expositor in Seaforth. Henrietta
Brown encouraged all of us to use all
of our fingers on the keyboards, while
she snapped out close to 90 words per
minute. Nothing escaped her careful
eye, and she was a whiz at grammar,
the knowledge of which I would
dearly appreciate having.
Henrietta maintained that this was
the easiest custard pie, and other fruits
could be substituted with minor
adjustments to the sugar amounts. I
have never tried anything else but
rhubarb, and would enjoy hearing
about any variations you may try.
My pie shell is a quickie recipe that
