interactions with the handler and
avoidance behaviour (such as
balking, jamming and piling) to meat
quality was documented. Researchers
found that such behaviour led to
signs of acute stress such as higher
blood glucose and higher lactate
levels. Higher levels of blood
glucose are associated with a low
initial pH in ham and loin and higher
shear values (tougher meat). High
levels of lactate are associated with
low initial pH in the loin, lighter loin
colour and higher drip loss levels for
both the ham and the loin.
The initial results show there is
a relationship between the
behaviour of the pig on the
farm and measures of stress and meat
quality at the plant. Surprisingly the
"bold" pigs had the highest drip
losses. The results, however, support
other findings that indicated that
individual pigs that seem to be less
fearful may actually tend to have
more meat quality problems, Dr.
Widowski said.0
