people in southwestern Ontario,
getting a turkey that has been grown,
and for the most part, processed,
within 100 miles is no problem.
According to the Ontario Turkey
Producers' Marketing Board website,
the second-largest production area in
Ontario is "district 2", made up of
Perth, Wellington and Huron
Counties and the Region of Waterloo
where there are 42 producers with
more than 22 million kilograms of
basic quota. Next highest production
area is District 1 made up of
Middlesex (home of turkey giant
Cuddy Farms), Lambton, Oxford,
Elgin, Essex and Kent with more
than 28 million kilograms of quota
among 55 producers.
The family -operated integrated
turkey growing and processing
company Hayter's Turkey
Products Inc. at Dashwood will be
busy producing about 40,000 birds
for Christmas tables from Chatham
in the south to Wiarton and Meaford
in the north and east to areas east of
Toronto, says Tom Hayter, one of
several members of the family who
still work in the company started by
his father Elmer. All those birds will
be grown on their own farm.
The Hayters' busy Christmas
season follows on the heels of the
U.S. Thanksgiving rush to supply
customers on the American side of
the border.
To the north, there's a turkey
processing plant in Hanover run by
P&H Foods, a division of Parrish and
Heimbecker Ltd.
Cuddy 1?oods processes thousands
of turkeys at various plants including
one in Dublin on the Huron -Perth
border.
Stuffing for that turkey could be a
challenge under the 100 -mile rule.
While there are many local bakeries
and you can make bread yourself,
most bread is made using flour from
high -protein wheat from western
Canada. However for those in the
southern portion of midwestern
Ontario, Arva Flour Mills just north
of London does make both bread
Flours and pastry flours from Ontario -
grown wheat. Run by the Mathews
family, this is a fascinating family-
-owned business going after niche
markets including organic flours and
the mill is still powered by the water
of Medway Creek as it has been since
