Dr. Paoli Rozzi
Lower quantity but higher fat and
protein on organic dairy farms
"If you breed back to one of the
two parents' lines, then you get a
kind of fallback," he says.
That's why de Groot is using
Jersey sires for his
Holstein/Simmental cows. He hopes
hybrid vigour can be maintained for
the third generation.
De Groot's Jersey/Holstein/
Simmental heifers have yet to
be bred. He doesn't plan to
milk any of their offspring the
fourth generation — and so will need
return to his Holsteins to start the
process over again.
"If you start with Holsteins, you'll
always have to keep a certain
percentage of purebred Holsteins in
your herd."
There's a sideline benefit. The
male Holstein/Simmental calves can
be raised for beef of considerable
quality and there's a substantial
premium attached to the organic
product.
Rozzi, who spoke at Guelph
Organic Conference in January, said
she surveyed 18 of the 45 organic
dairy farms and compared the data
gathered with DHI (Dairy Herd
Improvement) records.
Organic farms had lower milk
production, about 1,900 kilograms
less on average, but higher fat and
protein and a lower replacement rate.
The somatic cell count was
somewhat higher for organic farms
but organic producers reported far
fewer health problems.
In comparing, on a subjective level,
why organic and conventional
