In 1964 the company built a
larger, more modern facility but in
1974 fire struck and destroyed part of
the building. The building was rebuilt
to the original design and reopened in
the spring of 1975.
Since 1979 the dairy's focus has
been exclusively on ice cream and
with a massive $13 million overhaul
in the late 1990s, now ranks as one of
the most modern ice cream making
facilities in North America. The
famous Dairy Bar remains on the
original site and is a local landmark.
The dairy hopes the Omega-3 ice
cream is the beginning of a new
chapter in its development. The plan
is to eventually market the ice cream
nationwide.
Clemons says that, according to
the experience with Omega-3 eggs,
awareness is highest in Ontario
followedby British Columbia and
Quebec.

premium for a healthier food,
of course. Still, though you
might pay an extra 50 per cent for
Omega-3 eggs over regular eggs, the
cost of the benefit of the unsaturated
fatty acids is really low when you
break it down to two eggs a day,
Clemons points out.
He's expecting more demand for
his Omega -Rich technology.
Attempts to convince consumers
they're fulfilling their need for
Omega-3 by drinking flax -enhanced
milk are not going well, he says, and
other dairy companies are likely to
come looking for a technology to
create enriched table milk.
Longer term, watch for the
possibility of feed additives that
come from algae, not fish meal.
Omega-3 fatty acids are actually
created by algae, not fish, Clemons
says. Fish get the unsaturated fatty
acids by eating the algae. Already
there are experiments under way to
extract the DHA directly from algae.
Until a little more than a decade
ago milk was the most commodified
of farm products. While samples
were taken from each farm as the
milk was picked up for testing for
purity and components, the milk was
all mixed in the same tank and pretty
much treated as equal. Now, with
organic milk and Omega-3 milk.
