The newest entry in the market is Naturelle Plus Ice Cream, a premium brand from Stoney Creek Dairy. Milk for this ice cream is being produced on a number of Teeswater-area farms. Getting Omega-3 fatty acids into milk is more complicated than simply adding ground flax to chicken rations to get Omega-3 eggs. That's because of the digestive system of ruminant animals like cattle and sheep are so different than chickens, pigs or humans which have more simple stomachs. As Mandell explained, pigs' and chickens' simple digestive systems digest proteins in the stomach but the main absorption of carbohydrates, protein and fat takes place in the small intestine by enzymes. In the large intestine there is some absorption of fatty acids, water and minerals through bacteria in the gut. n a ruminant digestive tract, instead of having a large microbial fermentation vat in the small intestine, it is part of the stomach. The bacteria, protozoa and fungi in the reticulorem rumen get the first crack at feed, breaking it down and creating new products. "The big advantage of the ruminant is that these products can then go into the small intestine and be fully utilized." This is the benefit that cattle and sheep have in breaking down cellulose in grasses and forage. But with a monogastic animal like a pig or chicken, if you feed it unsaturated fatty acids it will deposit unsaturated fatty acids in its flesh and, in the case of laying hens, its eggs. With ruminants, the bacteria will convert the unsaturated fatty acids into saturated fatty acids which will be deposited into meat and milk. The trick is to get the unsaturated fatty acid past the rumen without being converted by the bacteria to saturated fatty acids. The system used by Neilson was developed by the University of Guelph and leased to Foods Systems Innovations Inc. It uses feather and bone meal to escort the unsaturated fatty acids through the rumen.
