worth more it helps the whole market
for pork, Robbins explains.
The co-ordinators are an on -the -
ground link to smaller local retails,
being only a phone call away,
Campbell says. She also works with
consumers, giving out lots of
placemats for community dinners and
fridge thermometers and pop-up
thermometers to promote food safety.

in promotion at the local level,
Campbell agrees, partly because the
promotion budget is channeled to the
local area rather than a high-cost
national media campaign. Local milk
committees have their dairy
educators but nobody "seems to be
doing the extensive work we do."0

at 30th anniversary
Pork Congress
Cooking pork will also get a
boost at the 2003 Ontario Pork
Congress with a Cooking Demon-
stration, featuring Chef Linda,
from the Zehr's Cooking School.
As part of the Pork Congress's
special 30th anniversary cele-
bration, held June 19-20 at the
Stratford Fairgrounds, Chef Linda
will be preparing new and exciting
dishes, just for the occasion.
Demonstrations will take place
daily between 1:30 and 3:30 p.m.,
in the Heritage Building at the
Fairgrounds.
This year's Pork Congress will
also provide a little friendly
competition to see who's the Best
of the Barbeque, with the
Weekend Warrior BBQ Cook -Off,
Thursday, June 19. The event is
open to everyone, with three
categories to express one's own
creativity at the grill, including
ribs, chops and ground pork. The
winner in each category will receive
$250 with $100 for the runner-up.
