1 cup (250 mL) plain yogurt
grated rind of 1 orange
1 cup (250 mL) chopped
cranberries, dates, raisins or nuts
In large bowl, stir together flour,
baking soda and salt. In large mixer
bowl, cream butter and sugar until
light. Add eggs, one at a time,
beating well after each addition. Stir
in yogurt, and orange rind. Add
yogurt mixture all at once to dry
ingredients; stir just until moistened.
Stir in cranberries. Divide batter
evenly among 12 large or 36 mini -
greased muffin cups. Bake in 400°F
(200°C) oven 15 to 20 minutes or
until done. Remove from pans; cool
on wire racks. Serve with Honey
Butter:
Cream together 1/2 cup (125 mL)
butter and 1/3 cup (75 mL) honey.
GOLDEN SCRAMBLED EGGS
WITH FRESH TOMATO SALSA
Salsa:
2 large tomatoes, seeded and diced
(about 2 cups/500 mL)
1/2 cup (125 mL) thinly sliced
fresh basil (or 2 tsp/10 mL) dried
basil
2 green onions, diced
1 1/2 tbsp (22 mL) balsamic
vinegar
1 tsp (5 mL) salt
1/2 tsp (2 mL) pepper
In medium bowl, combine all
ingredients; set aside.
Eggs:
8 eggs
1/4 cup (50 mL) milk
2 tbsp (25 mL) butter
1 cup (250 mL) diced sweet
yellow pepper
1 container (250 g) herb -and -
garlic cream cheese
Whisk eggs and milk together. in
large skillet, melt butter over medium
heat; add yellow pepper and cook,
stirring for 1 to 2 minutes or until
softened. Reduce heat to low. Add
egg mixture; cook, stirring
constantly, until egg starts to set. Add
cream cheese by spoonfuls and cook,
stirring, until thick and creamy.
Toast:
18 diagonal slices baguette,
toasted
Arrange 3 slices on each plate in
shape of trillium; spoon egg mixture
on top. Spoon salsa in middle of
trillium design.
HAM -FILLED CUCUMBER
CUPS
1/2 cup (125 mL) coarsely
chopped ham
3 tbsp (45 mL) light mayonnaise
2 tbsp (25 mL) finely chopped
walnuts
1 1/2 tsp (7 mL) dijon mustard
1/2 tsp (2 mL) curry powder
(optional)
1 large cucumber
sweet yellow pepper strips
(optional)
In food processor, finely mince
ham and mayonnaise. Remove
and stir in walnuts, mustard and curry
(if using). If desired score skin
of cucumber with tines of fork or
zester. Cut cucumber into 1/2 to
3/4 -inch (1 to 2 cm) thick slices.
With melon bailer or small spoon,
scoop out core, leaving bottom intact.
Fill each cup with approximately
2 tsp (10 mL) filling. If desired
insert 2 short and narrow
yellow pepper strips in the ham
filling.0
