firmly into 8 -inch (20 cm) square pan
sprayed with cooking spray. Spread
with melted chips. Sprinkle with
chopped peanuts: press gently into
chocolate. Cool until chocolate is
firm.
Cut into squares.
ROCKY ROAD SQUARES
3 cups (750 mL) miniature marsh-
mallows
2 1/2 cups (625 mL) crisp rice
cereal
1/2 cup (125 mL) corn syrup
1 cup (250 mL) semi -sweet
chocolate chips
1/2 cup (125 mL) creamy or extra -
smooth peanut butter
no -stick cooking spray
In Targe bowl, combine
marshmallows and cereal. In
saucepan, combine syrup and
chocolate chips. Stir over low heat
until smoothly melted. Remove from
heat.
Stir in peanut butter. Pour over
marshmallow mixture and mix well.
Press firmly into 9 -inch (23 cm)
square pan sprayed with cooking
spray. Cool. Cut into squares.
CHOCOLATE PEANUT BUTTER
CLUSTERS
4 oz semi -sweet chocolate
1/4 cup (60 mL) peanut butter
(smooth or crunchy)
1 cup (250 mL) unsalted peanuts
(or raisins or half of each)
Melt chocolate (either over
simmering water in double boiler
or in a medium microwaveable
bowl at medium (50%) for
2-3 minutes, stirring often), until
almost melted. Remove from heat
and stir until smooth and completely
melted.
Add peanut butter and stir until
blended. Stir in nuts and/or raisins.
Drop by small spoonfuls onto waxed
paper -lined cookie sheet. Chill until
firm, about 1 hour.
Transfer to airtight container and
store in refrigerator.
