different stations, each being
whisked away for further processing
or storage. Even blood is collected.
All waste is removed from the plant
daily.
Carcasses are cooled in large
cooler rooms before entering the
cutting room where conveyors allow
cutters to cut up the hogs into primal
cuts which will be sold to
independent processors. The cuts
will be customized to meet the needs
of the individual processors. A list of
products includes everything from
pork sides, loins, butts, pork bellies
and spareribs to ears and tails.
Live animals flow into one end of
the plant, finished product comes out
the other. Workers from the live hog
area can't enter the slaughter area
and slaughter workers can't go into
the cutting room.
The plant is expected to employ
45 to 60 employees by the end
of the first year of production
when a single shift will process
1,000 hogs a day. A second shift is
planned, bringing production to
2,000 hogs a day.
The current plant is phase one and
the company has plans up to phase
four, Joe Terpstra said. The
equipment can handle more hogs
than currently planned but the
limiting factor is cooler capacity. The
plant, designed by Mallot .Creek
Associates Inc. of Fergus, is built in
such a way, however, that more
cooler rooms can be added without
disrupting operations.
The new plant allows Acre T to
market "story pork" with its history
from birth to finished product
available to consumers, said Miriam
Terpstra in her address to opening -
day guests.
A new division, Acre T Foods,
has a goal to introduce a branded
marketing program using the
company's genetics, animal
husbandry protocols and feeding
programs to bring "a superior pork
product to the market", according to
a company information sheet.
Terpstra proudly announced that
Acre T Farms had just received the
coveted ISO 14001 certification in
recognition of its environmental and
management systems.
