halved into sauce.
To serve spoon berry sauce over
ice cream. Garnish with additional
berries if desired.
FRESH BERRY PIE
2 tbsp (25 mL) plain gelatin
1/2 cups (125 mL) sugar
3 cups (750 mL) unsweetened
juice (strawberry, raspberry,
cranberry or combination)
4 cups (1 L) whole or sliced fresh
strawberries
1 9 -inch (22.5 cm) baked pie shell
2 tbsp (25 mL) creme de menthe
or 1/2 tsp (2 mL) peppermint extract
whipped cream or whipped topping
Soften gelatin in 1/4 cup (50 mL)
unsweetened juice; add one half the
remaining juice and sugar. Heat to
dissolve gelatin. Remove from heat.
Add remaining juice. Place mixture
in refrigerator to chill until the
consistency of raw egg whites. Stir
occasionally.
Fold in fresh berries and creme de
menthe; spoon into pie shell.
Refrigerate to set.
Serve with whipped cream or
whipped topping.
STRAWBERRY ANGEL
SHORTCA KE
3 cups (750 mL) sliced
strawberries
3 tbsp (45 mL) granulated sugar
3 tbsp (45 mL) rumor 2 tsp (10
mL) rum extract, divided
3 tbsp (45 mL) orange juice
3 squares white chocolate
1 cup (250 mL) whipping cream
1 medium angel food cake (about
340 g)
Garnish:
8 Targe strawberries
fresh mint leaves
In medium bowl, combine
strawberries, sugar and 1 tbsp (15 mL)
rum or 1 tsp (5 mL) rum extract.
Combine remaining rum or rum
extract and orange juice in small
measuring cup.
In a double boiler or small bowl,
melt chocolate slowly over hot water.
Stir occasionally. Cool to room
temperature.
In clean bowl, add whipping cream
to cooled chocolate and beat until soft
peaks form.
Slice cake horizontally into 3
layers. Place one layer on large cake
