You should be proud to note that
both the ever popular Yukon Gold
and the Banana Fingerling are
Canadian bred and make wonderful
German potato salad. Try some of the
blue skinned potatoes like All Blue or
Congo which is an old Swedish
variety with dark purple flesh. The
Blue Nose is a Canadian heirloom
variety from Tancook Island, Nova
Scotia. It has lavender skin with
white flesh with blue markings.

Look to the internet to locate
suppliers of more unusual varieties in
Canada. Don't forget your local
supplier. You may be surprised what
they have on hand. Above all
remember how you want to cook
your potatoes. Some are best for
mashing while others are great for
frying or making those specialty
