The Rural Voice, 2002-04, Page 47N 1 tsp (5 mL) liquid honey 1 tsp (5 mL) finely grated lime zest 1 tsp (5 mL) pepper sauce 1 tbsp (15 mL) sesame oil 1/4 cup (50 mL) vegetable oil 1/3 cup (75 mL) chopped fresh coriander 3/4 tsp (4 mL) each salt and pepper 1 Ib (500 g) large, cooked, shelled. deveined shrimp 1 green mango, peeled and finely diced 1 cup (250 ml) very thinly sliced red onion 8 Boston or radicchio lettuce leaves In large bowl, whisk together rice vinegar, lime juice, honey, lime zest and pepper sauce. Whisking constantly, drizzle in sesame and vegetable oils until well combined. Stir in coriander, salt and pepper. Add shrimp, mango and onion to bowl; toss until well combined; taste and adjust seasoning if necessary. Place equal amount of shrimp/mango mixture on each lettuce leaf. FOIL -WRAPPED SPRING SCALLOPS 1 1/4 lbs sea scallops 1 tbsp olive oil 2 tbsp lemon juice 2 tbsp unsalted butter 2 large shallots, minced 1/2 cup minced fennel bulb 1 cup uncooked couscous 1 cup freshly shelled or frozen peas 1/2 cup shredded carrots 1/3 cup minced fresh dill l tbsp grated lemon zest sea salt and freshly ground pepper 1 1/2 cup vegetable broth 1/2 cup dry white vermouth 1/4 Ib fresh baby spinach leaves 2 tbsp shredded fresh basil Toss together scallops, olive oil and lemon juice. Set aside while preparing couscous. Melt butter over medium heat in a small skillet. Add shallots and fennel and saute until softened, 5-7 minutes. Transfer to mixing bowl and combine with couscous, peas, carrots, dill and lemon zest. Season with salt and pepper. Combine vegetable broth and vermouth in a container with a pour spout.
