BUFFET TURKEY PIE pastry for a 9 -inch (23 cm) double crust pie 2 tbsp (25 mL) butter 2 tbsp (25 mL) oil 1 cup (250 mL) sliced celery 1/2 cup (125 mL) snipped green onions 2 cups (500 mL) sliced mushrooms 1/2 cup (125 mL) white wine 1/3 cup (175 mL) all-purpose flour 2 cups (500 mL) chicken stock 1 cup (250 mL) milk 1/2 cup (125 mL) diced pimento 1-14 oz/398 mL tin artichokes, drained and cut in half 2 tbsp (25 mL) snipped fresh parsley 1/2 tsp (2 mL) rosemary salt and pepper to taste 4 cups (1 L) cooked, cubed turkey or chicken In large saucepan over moderate heat, heat butter and oil. Add celery and onions. Saute 5-6 minutes. Add mushrooms and cook, stirring often for 5-6 minutes. Add wine and cook over moderately high heat until the liquid has reduce by half. Remove from heat and stir in flour. Gradually stir in stock and milk. Return to moderately high heat. Cook, stirring constantly until mixture thickens. Remove from heat and stir in pimento, artichoke, seasonings and turkey. Spoon turkey mixture into 9"x 13"x2" (33 x 23 x 5) baking dish. Cool slightly. Roll pastry slightly larger than baking dish. Place on top of turkey mixture. Fold any overhang underneath and form a standing rim around casserole edge. Flute pistry. Slit pastry in several spots to allow steam to escape.
