ORANGE NUT BISCOTTI
2 1/4 cups (550 mL) all-purpose
flour
1 1/2 tsp (7 mL) baking powder
1 tsp (5 mL) mace (ground)
1/4 tsp (1 mL) salt
1/2 cup (125 mL) hazelnuts OR
almonds (chopped)
3/4 cup (175 ml) granulated sugar
1/3 cup (75 ml) margarine
2 eggs
1 tsp (5 mL) vanilla extract
1/2 tsp (2 mL) orange OR lemon
extract
Combine flour, baking powder and
seasonings; set aside. Roast nuts in
shallow baking pan in 325°F (160°C)
oven 8 minutes until toasted. Let
cool.
Cream sugar and margarine until
tight and fluffy. Beat in eggs and
extracts. Stir in reserved flour
mixture; fold in toasted nuts. Divide
dough in half. Place on lightly
greased baking sheet; shape into 2
logs 1/2 -in. (1 cm) thick, 1 1/2 -in (3
cm) wide and 12 -inches (30 cm)
long.
Bake in 325°F (160°C) oven 25
minutes until golden brown. Cool on
a wire rack for 5 minutes. Slice
biscotti diagonally about 1/2 inch (1
cm) thick. Place slices flat side down
on baking sheets. Return to oven and
bake an additional 10 minutes to dry.
Remove and let cool.
BRAIDED CREAM CHEESE
COFFEE CAKE
1 pkg (8oz) cream cheese,
softened
1/3 cup (75 mL) sugar
1/4 tsp (1 mL) almond extract
1 pkg (3 oz) cream cheese
1/4 cup (50 mL) (1/2 stick) firm
margarine or butter
2 1/2 cups (625 mL) biscuit mix
1/2 cup (125 mL) milk
Heat oven to 400°F (200°C).
Grease large cookie sheet. Mix 8 -
oz package cream cheese, sugar and
almond extract until smooth; reserve.
Cut 3 -oz (85 g) package cream
cheese and the margarine into baking
mix in large bowl with pastry blender
until particles are size of small peas.
Stir in milk. Turn dough onto surface
well dusted with baking mix; gently
roll in baking mix to coat. Knead
lightly 10 times. Roll into rectangle,
