local economy, he said.
The plant will have a competitive
advantage by reducing the normal
trucking costs of live hogs to plants
which are located farther from the
main pork producing areas in the
province. More than 50 per cent of
Ontario's hog production is within a
one-hour drive of Listowel.
The plant will be the most
modern in Canada, said Tito
Guglielmi of Mallot Creek
Associates Inc. In Fergus, the
engineering firm handling the design.
It will be just the fourth plant in
Ontario to use a carbon dioxide
stunning system. The system lowers
the hogs into a well filled with CO2
which renders them unconscious in a
less stressful way than normal
stunning processes. Once slaughtered
and bled, the hogs will then go
through a new vertical steam tunnel
process, imported from Europe and
the only one in North America. This
rids the carcasses of any hair in the
most sanitary manner. Other plants
use a hot water bath that can lead to
cross -contamination from one carcass
to the next.
The steam process also reduces
the amount of water required, part of
the effort to make the plant
environmentally friendly. Everything
that can be recovered will be
recovered, such as blood, says
Guglielmi. "Every last piece we can
sell we're going to sell," he said. As
well, there will be a primary
treatment facility to bring any
discharged water up to municipal
standards before putting it in the
sewage system.
While seeking a location far from
neighbours, Terpstra said the plant
will be much like any other industrial
plant. Everything will be contained
inside the ordinary -looking building
including by-products. All carcasses
and by-products will be shipped on a
daily basis. There will be no smell,
she said.
As well, says Guglielmi, because
the plant is refrigerated, it will be
heavily insulated which will reduce
any noise to the outside.
Terpstra said the new plant will
offer producers an alternative market,
especially when the large plants go
on strike, throwing marketing into
turmoil.0
