only need to be worn if people have
sores, infections or boils. Gloves
should be used for a specific use and
discarded, he said. "Gloves give a
false sense of security. They have to
be clean too (just like hands)."
Cassidy got into the specifics of
how the health unit would like to see
dinners conducted.
If too many turkeys are needed to
be cooked at the church or hall, the
health officials prefer the turkeys to
be brought to the hall kitchen for
cutting up, she said. Cutting at home,
necessary if there's not sufficient
room in the kitchen, adds additional
risk in the food preparation, she said.
"We prefer that everybody brings
the juices to the church and make the
gravy there," she said. "We're trying
to make things simpler and safer."
She also urged groups -not to stuff
the bird for cooking, instead, creating
the stuffing in crockpots or in other
ways. "I'd prefer to see no stuffing
(while cooking)". The bonus is the
turkeys will cook faster.
"We'll work with you to come up
with a process," she said, explaining

she is trying to get recipes from those
who have developed .a good stuffing
that's not cooked inside the bird.
Ordinary fruit pies are safe to be
left out but cream pies shouldn't be
left out at room temperature, she
said, suggesting that such pies only
be put out at the last moment and that
only a few be put on the table at a
time.
Cassidy said the Health Unit will
work with groups to develop flow
charts to identify the potential
dangers (and solutions) in their
preparation procedures.
Ending off the discussion,
D'Alessandro went back to the
concerns caused by the initial letter.
"Go back to your pastors and your
priests and tell them we're okay," he
urged.
While, some people leaving the
Teeswater meeting didn't feel they
had learned a lot from the health
inspectors, Fischer said they had
heard the one sentence they'd come
to hear: that health officials weren't
going to shut ,down their community
